Air fryer and frozen french fries are a severely underrated combination in the TH-cam food space. It's pretty much the only way I have been making french fries the last few years. Mainly because it's so easy, but good to know that it has your stamp of approval!

The funny thing is that fries aren't commonly eaten like this in Japan. You usually see these tricked out "super Japanized" preparations at overseas izakayas obviously because they're trying to stand out, but the local ones here usually just serve normal fries. The common flavors you'd find would be nori-shio (powdered seaweed and salt), consomme soup powder, maaaybe mentaiko butter.
I've used both Oreida and Lamb Weston, and really, they're both great. But, what you really want is the style of fries: crispy / restaurant style. It's out of this world crispy because they use one ingredient: rice flour. They coat the fries in it before frying, and it just makes them so crispy, you can't go back.
There's a local restaurant that prides themselves in their fresh cut fries and have multiple options for potato varieties and cuts. Sometimes I ask what variety is frying up best that day because they can differ a lot from batch to batch.
Using furikake as seasoning on fries is also amazing. Never had it w the curry but I have often made fries w furikake and nori and dipped in Japanese mayo and ketchup w a dash of soy sauce and pinch of MSG 🎉
I was thinkin just this, furikake will make a great seasoning to the fries.

A great method i found to cook the fries is to coat them in a neutral oil before baking, it makes them much more crispy. I usually just add a small amount of oil and the fries in a bowl and toss them to get the fries covered

I remember working in a restaurant 22 years ago and fresh potatoes were used. We made our fries from scratch with a fries cutter that was mounted right to the wall.

I agree with you about the frozen fries it's such easy to use them instead of possibly soggy fries from regular homemade potatoes. Also having your place smelling like fried oil is not good that's why I cook stuff like that outside.

Try putting anything frozen like that into the oven when it's cold. As the oven comes up to temp they thaw and you don't overcook the outside vs inside so much.

If you want frozen fries and you can get yourself into a restaurant supply store like Restaurant Depot and you have a big enough freezer you can get frozen fries that are excellent and about as cheap as unprocessed potatoes.
Also, personally I've come to prefer frying once I got T-Fal's fryer where you just turn a knob and it filters the oil into a storage box.

Very nice it looks delicious. The recipe has some steps but they really aren't hard if you are ok doing simple prep, especially since you have to wait for the fries to cook anyway.
