  • Fajita Salad Bowl
    Ingredients:
    1 Tbsp Olive Oil
    1 Cup Sliced Ball Peppers
    1 Onion (sliced thinly)
    1 Cup Grilled Chicken Breast Pieces
    1 Tbsp Fajita Seasoning (Recipe : • DIY Fajita Seasoning R... )
    Heat Oil in a pan and sauté the peppers in it for 2 minutes.
    Add in 1/2 tbsp of fajita seasoning. Mix well and cook for another minute.
    Push the vegetables to the side of the pan and add in the chicken breast. Season with the rest of the fajita seasoning.
    Mix together and cook for 1 minute.
    Set aside.
    1 Cups Basmati and Wild Rice (cooked)
    1/2 Cup Chopped Lettuce
    1/4 Cup Corn (cooked)
    1/4 Cup Black Beans (cooked)
    3 Tbsp Sour Cream
    3 Tbsp Mashed Avocado (seasoned with salt and lime juice)
    1/4 Cup Pico De Gallo (Recipe: • Picco De Gallo (Salsa ... )
    Assemble the fajita bowl as per the video.
    Note:
    The different elements can be prepared a day in advance to save time.
    You can replace chicken with tofu or any other plant based protein for a vegan option.
    You can also replace the black beans with other beans such as pinto or kidney beans
