Searing in a very hot pan is fast, easy, and more controllable than grilling and the result is a steak that's more tender, moist, and full of flavour.

• RARE: Remove from heat at 48ºC / 118ºF for a final cooked temperature of 50ºC / 120ºF.
• MEDIUM RARE: Remove from heat at 52ºC / 125ºF for a final cooked temperature of 54ºC / 130ºF.
• MEDIUM: Remove from heat at 58ºC / 136ºF for a final cooked temperature of 60ºC / 140ºF.
• MEDIUM WELL: Remove from heat at 62ºC / 143ºF for a final cooked temperature of 65ºC / 140ºF.
• WELL DONE: Remove from heat at 68ºC / 154ºF for a final cooked temperature of 70ºC / 160ºF.
That last shot was stunning! The pan-seared steak with thyme and rosemary made me want to eat my phone, it looked so good! I used to think grilling was best, but this method looks easier, and the results look and sound even more delicious! Can't wait to try this myself! 💯
