I would say my favorite amiibo that came out this year in 2016 has got to be the Wolf Link amiibo. It was my first amiibo and now my collection of amiibo is almost complete (excluding the Animal Crossing amiibo since I'm not really into that series). Keep up that awesome work!!!!

despite it nearly being a 2015 release I'd say that Shovel Knight is my favorite of the year. He has awesome functionality a wonderful amount of detail and most of all he holds the honor of being the first Non-Nintendo produced amiibo.
