    I have been receiving questions on why we need to use egg whites and not whole eggs for making keto bread. So today, I am going to show you the differences of using egg whites and whole eggs.
    First of all, why do we need eggs in keto bread? Eggs works as a binder, provides bulk, structure and moisture as well. How much eggs we use would depend on the type of low carb flour and its quantity. For example, coconut flour is very absorbent hence, it needs more eggs while other flour may need less.
    Regular wheat flour is light and rises so well due to the protein from gluten. On the other hand, low carb flours are non-gluten and contains more fats as they are made from seeds, nuts and coconut. Hence, keto bread tends to be heavier, denser and they do not rise as much as regular bread even with baking powder and yeast. That is why by adding more protein into the bread, it will help to boost the rise. And when the bread rises more, it will be lighter, softer and fluffier.
    All this while, I have been recommending using egg whites instead of whole eggs for making keto bread because the protein from egg whites helps to boost the rise of the dough while the fat from the yolks hinders the rise. Additionally, using egg whites will also make the bread look lighter in color and prevent any eggy taste.
    Both versions with egg whites and whole eggs will rise as the latter still contains some egg whites. It is just a matter of how much they rise which will ultimately affect the texture. So, if you prefer to use whole eggs, feel free to do so. I know that there are people who love eggs, and they don't even mind the eggy taste. This video is just to show you the differences for better understanding so that you can choose which option to go for.

    If you choose to use egg whites, here are some ways that you could use the leftover egg yolks;
    1. Scrambled eggs (add some whole eggs)
    2. Steam eggs (add some whole eggs)
    3. Low carb fried rice
    4. Egg tarts
    5. Crème Brule
    6. Egg custard
    7. Ice cream
    8. Pasta sauce
    9. French Buttercream
    10. Lemon Curd
    11. Caesar salad sauce
    12. Hollandaise sauce
    13. Mayonnaise
    14. Flan
    15. Indonesian layer cake
    16. Lemon bars
    17. Lemon tarts
    18. Aioli
    19. Chewy cookies
    20. Salted Eggs (Cured eggs)

    I love to bake bread by using egg white only and really don’t mind to throw away the yolk at all! Actually I don’t make anything if needs many eggs. I welcome more recipes by using egg white only😀😀😀👍👍👍😋😋😋

    I plan on incorporating lupine flour as it is higher in protein. Any suggestions are highly welcomed. I really prefer the all egg white breads myself. Love this channel.

      Most issues with keto bread especially too moist, dense, heavy, hollow etc are due to psyllium husks. That's why I came up with this video on Psyllium Husk Vs Powder so perhaps you can check it out for better understanding;

      They taste quite similar except for the slight difference in the texture. Somehow, I didn't taste the edginess in the whole egg version probably due to not too many whole eggs or it could be masked by the taste of the sunflower seeds

    Hi dear thanks for this demonstration… I tried with whole eggs & my bread turned green green hu so?Although d bread was nice & fluffy it was a little dense.

      Sunflower seeds can react with baking soda or powder making the baked goods to turn green once cooled. But this can be countered with acids like apple cider vinegar, white vinegar or lemon juice. Since acv is used in the recipe it sd not turn green so I am puzzled. As you used whole eggs, the bread will be denser.

      I've noticed some years ago that I need much more eggs for the same recipe if I use gluten free flour. I can imagine than if instead of putting more eggs in generall but more egg whites the recipe will turn out as perfect as with normal flour.

      Frankly I have not used egg white protein powder before so I am not sure whether it will work or not. You can alternatively use egg whites from cartons.

    If the recipe calls for 5 whole eggs, do i substitute it with 5 egg whites? Do you follow any rule in subbing whole eggs to egg whites?

      To substitute whole eggs with whites, you need to double up on the amount of whole eggs. For instance, 5 whole eggs, you need 10 egg whites.

      I actually Googled it hehe.. I have only tried with low carb fried rice, scrambled eggs, lemon tarts (see video at playlist), mayo and salad dressings. I am interested to try the salted egg yolks which I did not know until now that it's possible with the egg yolks removed.

      Yes, I’ve tried making the cured egg yolks covered in salt and it works in a pinch but not like the salted duck egg we are used to…

      Sorry I don't have but you can easily Google it. I usually do low carb fried rice as it creates such a vibrant color. I also do scrambled eggs with it. But I have used them in my keto Lemon Tart recipe which you can find the video in the playlist

    I enjoy your recipes so much. Could you please consider doing a few more informative troubleshooting videos like this? For example I tried your almond flour eggless yeast bread recipe and trying to figure out why mine didn't rise. I put parchment paper but I might have to grease it next time? I think you may have explained some possible reasons somewhere, but I can't find it! I followed the instructions including proofing in oven for an hour, baked for an hour, and let it sit for another hour in the oven with it turned off. It turned out like biscotti it was only like 2 inches tall. I think my scale might be defective?
