All you need is Teff flour, Injera starter , quinoa flour and water ! 8 cups Teff 1/2 cup Quinoa 12-15 cup Water 1 cup Starter Sorry not to mention that you can always save some of the batter for next time That would be your starter! You don’t have to make the starter each process! ! If you don’t make Injera like for a week, dump the water that separates on the top and add fresh water and keep it in your fridge . I did not try it with other flour but I know the quinoa is the key for this recipe to make the Injera taste good, spongy, very soft and it gives it good eyes. I will try it with other flour and I will let you know the result. We add only 1/2 quinoa flour for 8 cups of teff flour.

Yodit Tsegay I tried Teff and all purpose flour I will try to make video for that . 2 cups of teff , 1 cup of all purpose flour, I cup starter mix it with warm water ( 5-6!cups) the batter should be like ready to make it.. you can use blender if not your hand. At the 24 hours, you will see the water separated on the top tilt it and drain the water in a different container... don’t dump the water. you can use it if the batter is thick. Tsedenia Edjigu Bukri Ye Liyat Enat when you make your Injera ! Put cotton table cloth on your table and each injera should be መብረድ ( cooler) before you stuck them together! Put it in a plastic bag after it gets cold and you can put paper towel on the top between the Injera and the plastic bag! You can always keep the last 1/2 cup of batter as a starter in your fridge. Yes for my 24 hours Injera I always add 1/2 cup quinoa for 8 cups of teff! After you make 5-6 times you will be a pro 😊 yes it’s possible to mix but the outcome might be different
I once made the injera in my non stick pan, the bread was falling apart when I picked it up and would not cooked all the way, it was like an undercooked pancake. Any tips or what did I do wrong ?thank you
