@@stavrosantoniou2080 I agree with there my friend it dose taste beter in a clay oven I also noticed that Cyprus and greece mostly use goat meat, as for me there is only a slight difference in taste but not much even with lamb it still taste great keep up the good stavros and all the best 😇😃

Hi Arnaldo, We first made your recipe with Shoulder of Lamb and it was absolutely delicious! 😋 😋! We then tried it with Leg of Lamb and found that it was not as nice as the Shoulder. Had the party last night .... done two trays of the exact recipe with nice bread .... had only one complaint from them .....there should have been one more tray . Absolutely lovely . Well done . Even the ones that said they dont like lamb and lamb shanks etc tried it and wanted more .

Arnaldo Vinagre I've got to get my hands on some lamb. It's surprising to me that it's hardly sold in the stores here. You really have to look around to find lamb in some parts of the US. Thank you for the recipe, it looks amazing. The fact that it's simple makes it even better.

The time given is three hours at 180oC because of the 2 trays it would take a little longer but if I were you, I'll give it half an hour longer, and keep an eye after the extra half hour. janice brown Hello Janice, Regarding cooking rack of lamb, everyone uses a different method. Depending on the size of the lamb. The way I prepare mine is. 2 cloves of garlic, sprig of rosemary, salt, and pepper, crushed together. Mix with olive oil about 1/4 glass, then paste lamb all over, and rest it for couple of hours, or overnight in the fridge. Place lamb in roasting tin and cover with silver foil. Cook it in a preheated oven 180'c for 30 minutes. Remove foil and cook it for another 10-15 minutes or until golden brown. I hope that I have been of some help to you.
