    As someone who been to a Crete island in Greece, I have to say. This has to be one of my favorite Greek dish. It is so flavorful and the meat is juicy and tender. They cook the potatoes with the goat juices 🤤

    Yesss all that roasted garlic! Making this for this Easter 2021 my husband has been wanting leg of lamb forever, I usually just make make a small lamb roast and slice it super thin for the best gyros. I have to say your videos have brought lots of Greek dishes into my home. The saganaki recipes I learned from you are my favorite to make. Steve's too!! I make greek potatoes exactly like you for a couple decades. ❤️🌹

    I've literally just finished cooking this and I've had a bite to taste and it is absolutely delicious! The only thing I changed was putting a lot less salt due to my lamb leg being smaller and I put one lamb Knorr cube in the marinate. Thank you so much for the recipe, glad I can add this to my list of meals I can cook!

    My girlfriend love lamb and i make all sort of lamb recipes, i found that slow cooked lamb in crock pot usually turns out to be a success. I use red wine tomato paste garlic onion thyme base and always seared the meat first in olive salt pepper.

    Thanks for the recipe and how-to video. I made this, and you're right that it's super easy. I love lots of garlic too, and what I did afterward with the cloves was grind them in the food processor with some salt into a paste and had garlic spread for a few days! I did the same separately with the onions.

    WOW! I need to try this! Incredibly simple! I´ve would've added just a tad spoon of honey in the last 30 minutes roasting and when it's cooling some rosemary to gain flavor to create that golden crusty-flavory glaze on top of the lamb.

    Dear Demetra, thank you so much for τηε nice and simple instructions. I live alone in Dubai where I work, and I am unable to travel to Cyprus for Easter, so I'm here learning to cook. Thanks to you I made an excellent lamb in the oven. I deviated a little bit from your recipe, some times we don't have all the ingredients and it is difficult to get them too, however the result was excellent. I think what made a big difference was the lemon juice. Best regards and Happy Easter (Καλό Πάσχα).

    Yiasou Dimitra! I use a very similar lamb recipe for Easter (Pascha) with one minor exception. First, I cut many of the garlic cloves in half. Then I make deep cuts into the lamb with a pairing knife. Finally, I insert the garlic clove halves into the holes before adding the lemon marinade. You just can’t beat our authentic Greek recipes. Yiasas!

    Watching this again i am reminded of our Chef who used to come to our home when my parents had large parties,. although they both cooked certain dishes themselves they also had Steve come to augment what they had done. I loved cooking, which i found and still find one of the more creative Arts and Steve was a great teacher; since i would watch him constantly preparing and cooking foods he taught me a lot of things only professional Chefs know and some of his secrets. One was to cut a garlic clove in half then to rub it into the wooden salad bowl to help season the bowl for the salad for Caesar Salad but the one that constantly pops into my mind is with any cut of beef, lamb or pork take the tip of a sharp knife and cut random slits into it and then take cloves of fresh garlic and cut slivers of it then take each sliver of garlic and put it into the slits you have made in the meat and then you can marinate it or just continue to season it before you cook it. By doing this you distribute the garlic into the meat and it is absolutely delicious. If you are not aware of this you might want to give it a try. Always enjoy your video's Dimitria...

    • @DimitrasDishes
      @DimitrasDishes  6 ปีที่แล้ว

      Thanks for those tips especially since I love garlic!! I do inject garlic into my meats often when baking but I've never heard the salad bowl tip. Cool!!

    • @nancywhitehead6397
      @nancywhitehead6397 6 ปีที่แล้ว

      Steve had us keep one wooden salad bowl just for Caesar salad He then would always cut garlic in half rub it generously all over the bowl and then you assemble the salad and dressing but he would not wash the bowl You just wiped it down and let the wood season along with his Caesar dressing so that large wooden salad bowl never got water or soap on it but it was well seasoned and trust me that Caesar Salad was outstanding You could make a meal out of his salad Anchovies garlic Lemon Extra Virgin Olive oil etc etc I can still taste it today He spoiled us for any other Caesar Salad lol My mother kept that bowl separately and covered She sewed and made a special cover with a zipper just for that salad bowl lol

    • @slim1one
      @slim1one 6 ปีที่แล้ว

      You are right about the slits and garlic. It's the only way my mom, and now I, make lamb. People always ask me how I make my lamb and I tell them that the garlic slit into the meat just gives it so much flavour.

    • @rogrady6862
      @rogrady6862 5 ปีที่แล้ว

      @@DimitrasDishesCaesar salad wasn't on the menu when I grew up in the 40s & 50s, but our wooden salad bowl was rubbed with garlic & never washed. I seem to remember 1970s Joy of Cooking frowned on this habit as germ-ridden!

    Lots of armchair chefs on here with comments of which herbs and spices to use. This is a Greek dish, main herbs in Greek cooking are garlic clove, oregano, cilantro, coriander, cumin, and paprika and lemon I've been cooking this dish for over 30 yrs now, and if you want to make traditional Scottish or Irish Roast lamb and veg, all you do is switch the lemon and garlic switch to MINT, ROSEMARY, FINE DICED WHITE ONION, SEA SALT and FRESH CRACKED BLACK PEPPER mix all together and rub down the leg of lamb with it put it covered in the fridge for 2 hours then roast uncovered at 350 until done, internal temp should be 160 C when done. Also, roast veggies like Dimitria does if your veg comes out soggy then you are doing it wrong.

    Hi, Dimitra! I cooked this recipe on Sunday, and my husband and I both loved it! My one issue is that I was a bit heavy-handed with the salt. I'll be more careful next time. Also, I note that you used a 4-pound leg of lamb. Mine was 6 pounds, and I think I may have overdone it. Can you suggest how long I should've cooked it? I absolutely want to do this again!
    Thanks so much! I live in Canada, and I always have family over for Canadian Thanksgiving. I don't do the traditional turkey dinner. Usually, we do some kind of ethnic mail. This year we did Italian; the year before was Indian; and the year before that was Thai. I have already decided that next year we will do the Greek, specifically, this recipe. I would like to make your tiropita as an appetizer and baklava pinwheels for dessert.

    • @DimitrasDishes
      @DimitrasDishes  5 ปีที่แล้ว +6

      Hi Adele! My general recommendation for salt is 1/2 teaspoon per pound of meat. That usually works well.. try that next time and let me know. As far as roasting time, that really varies and depends on the age of the meat (animal) and your oven. Also everyone's preference is different. I like well done falling off the bone lamb whereas others prefer a medium well... Once the internal temperature reaches 145 degrees Fahrenheit, lamb is safe to eat. It will be medium -well. I hope this helps for next time. All the best! xoxo

    Fantastic Dimitra! Very similar to the Bulgarian Easter lamb. The trick is to kill the smell of the lamb. We use dry peppermint to kill the smell of the lamb. Do you have some Greek lamb or goat dishes with mint/dry mint? Yamas from DC!

      Mint goes so well with lamb. It also pairs very well with cheese. I love it in cheese pie! Lemon juice really tames the gaminess of lamb. I'll make a minty version too someday :) All the best!
