Such a great list! I'm getting married this year with just my partner and 12 guests in Vegas. No bridal party at all, no flowers, no favors, no cake, no dance. Just a 20 min ceremony in a chapel, followed by lunch at an amazing restaurant. We're going to see a show afterwards. I really like your idea of skipping the ring exchange part of the ceremony. We both already wear our rings so we don't necessarily need to take them off just to exchange them again on the day.
P.S. yes, the money dance is cultural/regional. It isn't a practice that's common across all weddings. I've only seen it once at a Hispanic wedding.
