    Hello Pearl , so lovely to have found your channel and to hear that little prayer you said before and after your introduction. I'm an 80 year old male from Delhi, but now residing in Australia. Those words of yours "My Mum" etc reminded me of the time when I was a young boy growing up in Delhi. My mother, and nearly every Anglo-indian family used to prepare this dish during Christmas.(and I had to go to the market to purchase all those ingredients you mentioned.) remember too how we had our Christmas cakes baked.but we were not allowed to have any of these goodies till after we, my brother and sister had gone to Midnight Mass. Good old memories that will never fade away ! God bless you and your family Pearl.

      Not available because it’s used in the production of gunpowder. Need to have a license.

    Praise the Lord. Indeed an encounter with Jesus Christ changes and transforms lives. Thanks for sharing. My grand mother (nani) used to make this. She used to make this with Neelgaay in 80’s when I was growing up. Every Christmas season we used to have it in the breakfast- salted, namakpare, bajra tikki, gujhiya, cake. Wonderful memories

    Your video made by childhood memories back. In 1979 we knew plenty of Anglo Indian family in india and Christmas was so much fun. We had long winter vacations.

    My Dad used to make this every Christmas. He used a terracotta container to make the salt meat. I will definitely make this. Thanks Pearl 🇨🇦

    Wonderful to have stumbled on to this recipe. My mum too would make this in winter. We used to keep in the sun for a few days and poke the single meat piece during the full week, with a steel poker rod. But i had no inkling on how to do it. Thanks. I am going to try this. God bless you.

    Great. I have made it too.. but as my aunt..would do it or rest it in a mud pot..and of course.she used to make a five kg meat chunk.. which I have also tried it..

    There used to be a recipe for large chunks of deer meat which was called Ding Ding ! What flavours what memories. Essentially was used to preserve the large quantities of game meat ! Any chance of digging out a recipe ❤

    My Grand mom would boil the meat in beer. Then take it out of the huge terracoater chat and let the meat cool off then ready to cut in slices and eaten like as if it was like cold cuts. itwas Awesome.

    Merry Christmas Pearl! Just wanted to know if we are supposed to wash the meat or not. When we make ham with pork we just wipe it. Do we follow the same procedure with raw meat?

      Here in the UK I just pat dry it but in india my mum use to wash it and then pat dry it. ❤️🙏🏽

    Pearl, youre the best. My mum and dad made this every Christmas. We made 5 kgs. For 5 kgs how much salt/salt petre and jaggery would you use. I havent made it in a while and cant recall mummys quantities. She didnt use more than a handful of jaggery that she burned on the tava for colour. The saltpetre did the rest.       Hi Jennifer, for 5Kg beef I would use around 450 to 500 grms of jaggery. Enjoy making it 👌🏻❤️🙏🏽

    I only knew pork was preserved in salt for months This is new to me. From where do i buy saltpeter.

      You will find salt Peter in an Indian shop and if not then on Amazon, and if you still unable to find it then it can be made without but it will have to be used up soon 🙏🏽❤️👌🏻

      I wrap it in a cloth so it doesn’t dry out and keep it in a cool place or in the fridge xx

      Yes for quickness you can pressure cook it, and yes you can put flavour into it, I just showed you the traditional method . 😁🙏🏽❤️

      You can make it without Salt Peter as I have made it before without it, the only thing is then I got to eat it sooner as it won’t keep for very long time . But it will still taste the same. ❤️❤️

      Hi it’s used as a preservative , but if you can’t find it you can still make it without adding Salt Peter , just use it quicker 👌🏻🙏🏽❤️

    My mom used to make salt meat in Calcutta but she would use soye and sakkar... One looks like sugar and the other like jaggery but it's not jaggery

    Lime and lemon? Lemon I know , but Lime? Is it kefir ? Any substitute for that.....not freely available here....and wont the meat turn bitter as you are marinating alongwith the skinbfor so many days?

      You can use Lemon then and no lime 🍋‍🟩 is not kefir is Nibbu in Hindi, and no the meat doesn’t turn bitter 😁❤️

    This is nothing but a corned beef recipe with some variations. I am of the club, where the food should come out flavorful with minimum amount of work. You can achieve the same results if you soak the beef in brine (salt water) for 7 days without doing snoring. Take the meet out, if you boil it, it becomes corned beef, and if you smoke it, it becomes a pastrami.

      Hi Kevin, I don’t reuse the water , and the salt meat can last for up to a month , because I remember eating it all through January when my mum use to make it, but here I only make a small joint as my kids don’t like salt meat 😁🤷‍♀️

    The lady of the house has to be completely clean while making salt meat. it may sound funny but it's true, cos even if the shadow of an unclean woman falls on the earthern pot the whole thing turrns bad. The best part of the ox meat is the hump, cos it does'nt have a single bone in the hump of the ox. and you should never ever wast the meat when you bring it home. you have to rub the meat throrughly with a soft white cotton cloth. and you have to once a day preferably in the evening the meat has to be pork edwith a porker and turned daily for 3 weeks.
