  • Crème Caramel - an elegant and absolutely delicious dessert known all over the world. What not to love to soft caramel on top, vanilla flavor and creamy consistency. Best part is that Creme Caramel can be made in advance which makes it perfect for gatherings or parties.
    Ingredients:
    Makes 4-6 servings
    For the topping
    1/2 cup + 2 tbsp (120 g) sugar
    2 tbsp (30 ml) water
    For the custard
    3 eggs
    2 cups (500 ml) milk
    1/4 cup (50 g) sugar
    1 vanilla bean
    1/2 tsp corn starch (optional)
    Directions
    1. Heat the oven to 325°F/160°C.
    2. Heat the sugar and water in a saucepan until the liquid turns golden brown. Immediately, pour the caramel into a 7 inch (18 cm) cake pan coating the sides too.
    3. Pour the milk into the same saucepan. Add the vanilla bean seeds and the pod into the milk. Heat the milk but do not bring to boil, then set aside to infuse for few minutes.
    4. In a separate bowl beat the eggs with the sugar. Add the corn starch. Pour the milk over the egg mixture.
    5. Pour the custard carefully over the prepared pan and place the pan in a larger pan. Pour hot water into the bottom pan to come half-way up the sides. Bake until golden for about 45 minutes to an hour.
    6. Cool completely. Then cover and refrigerate for at least a couple of hours. To serve turn out onto a plate.

    I have made this and it's PERFECT! it's my first time ever making creme caramel (tbh I'm new to the whole cooking thing) yet this was SO easy to make and so so yummy that my 60 year old chef aunt was impressed! however I didn't leave it for 1 full hour, it was done by 50 minutes. (this depends on the thickness of creme caramel and your stove type etc.) will definitely make this again and again :) thank you for the tasty recipe!

    My mom makes this with chocolate cake as the under layer. She puts the two batters together and they separate while baking forming two layers. It’s really good!

    Perfect recipe! I made it yesterday for the first time and it's absolutely delicious! Just made a few changes to get more croatian rožata style - added 15ml of dark rum, a bit of lemon peel zest and used a vanila sugar instead of the normal one to the custard. I was surprised how easy to prepare it was so I'll definitely make it few more times :)

    Tried this today. Custard came beautifully but I think I didn't brown the caramel enough. So it went really watery after I took from the fridge 😞. Is there anything i can do now to fix and get a nice caramel at the top?

    Wonder if this recipe could be ketofied??? Wheels are turning. Fairlife milk has only 6 carbs per cup could swap out 1 cup for cream possibly and use Bocha Sweet for the sugar. Without cornstarch wouldn't be many carbs at all if I can get the Bocha to work like sugar for the caramel. Hmmm might be an expensive experiment but I love Flan. 😋😋😋

    when i heat the sugar and water to make the caramel sauce , i end up with a brownish chunk of sugar . why does it harden rather than liquidate ? what am i doing wrong?

    This is pretty common in Brazil and we call it "pudim", but we use sweetened condensed milk, whole milk and eggs.

    So i made this last night, and will be serving it today. The caramel topping sounds crunchy when I bend the bottom of the pan...is it supposed to sound crunchy? Anyways, will let you know how it turns out.

      It came out perfect. The caramel topping was partly crunchy but that piece stuck to the pan. Good recipe.
