  • I'm getting married in a few months, and I want to make my own wedding cake! After speaking with some of you, I learned that a lot of you plan to make your own wedding cake too!
    Before I made this decision, I considered a lot of factors! If you want to know if you should make your own wedding cake, I highly recommend reading this: chelsweets.com...
    I figured it would also be helpful to share an in-depth tutorial, showing step by step how to make a four-tiered wedding cake! This cake is made with 10 inch, 8 inch, 6 inch, and 4 inch tiers.

    This wedding cake is decorated with fresh flowers, and is simply frosted with buttercream (no fondant!). I walk through leveling the cake layers, properly supporting each tier, stacking the tiers on a center dowel, and of course how to make an impromptu wedding cake box (thank goodness for Home Depot).

      Patrick Banks I Dislike Nasty Fondant! Everyone says You never tried the right fondant! There’s No right fondant in my opinion! To me fondant ruins a cake!

      Buttercream taste nasty, well I’m not much of a frosting kind of person. Yes I actually take off all the frosting, either give it to my sister or throw it out. Too much for me😣

    While the cake turned out nicely I have some tips for anyone attempting to make a cake of this size. First, you will need to use a foamcore base of at least a half inch thickness. A cardboard base isn’t sufficient support for a large tiered cake. Also, four bubble tea straws aren’t enough to hold up all that cake. Cakes are very heavy and to hold up an 8” cake you will need to use 7 straws and in general just use one straw less than the inches of the tier. In the end you will need to sharpen a dowel and drive it through all Cake tiers and the foamcore board. This will ensure that your cake does not slide around in transit. You can also use melted chocolate to adhere the first cake layer to each board before icing which is what I do.

      Hi Sharita, I did use a 1/2 inch thick base for this cake!
      And the number of straws did hold the weight of this cake for 36 hours, with 11 of those hours at room temp.
      I do agree though that sharpening the central wooden dowel would make it. way easier to slide the tiers on, and I hope one day when i have better tools I can do that

    To help keep layers flat, Wilton makes a silver fabric type thing that you wet and wrap around cakes. That way the don't cook at the edges faster than the center. I am not a professional but have used them for two layer cakes with success. Great tutorial, very concise.

      Barbara Fischer if using fresh flowers you MUST make certain the flowers are food safe and no pesticides were used on the flowers. Make sure the florist knows the flowers are going on a cake.

    I've always wondered, when you cut the cake to serve, do you discard the slices that had the straws in them? How do you make sure no one gets a slice with a straw in it? And that you don't slice right down on a straw? Dang, is my anxiety having too much fun rn

    Beautiful!!! You did an amazing job on the wedding cake!!! The layers and measuring everything out for the height. The box from Home depot was an excellent idea. Cake boxes can be very expensive, especially for larger cakes.

    Nice tutorial. Was taught not to bang pans on worktop as you loose the fluffiness you want in a sponge cake, only do this with fruit cake. This you acheive by sieving dry ingredients to get air in and whisking butter and sugar till light and fluffy.

    @chelsweets i recommend not banging the air out , your batter probably has baking powder/soda but air is also another leavener. i saw how dense your cakes came out and i wish you'd invest in a cake leveler, i havent gotten past much else, but im banging my head against my culinary arts degree.

    I hate to tell you (I own a retail bakery that does 200 cakes a weekend) but your flower nail does not induce enough heat to properly heat the center of the cake. You need a heating core which is made of solid aluminum or steel that inducts heat and finishes off the center of your cake. Anything 14" or below you don't need a heating core up to a 4" finished cake. Just a heads up

      Mary Kylee Smith I work in a bakery so I think I can help a bit. I would recommend starting 3-4 days before to give yourself plenty of time. Day one- bake and crumb coat. Day 2 stack and finish the buttercream layering (making sure it’s all even) day 3 decorate! Give yourself a lot of time to decorate just in case the first time doesn’t turn out the way you want it, you’ll have plenty of time to smooth over any bumps or little holes in the b/c. Day 4, transport! I only say 4 days in case you don’t want to finish it up on the day of the wedding.

      @Addsi3 Great advise, but if you are a newbie be sure the cake or it’s components doesn’t require refrigeration. Allow yourself a bit extra time as well. The bride probably wants the cake done, & there, setup, on time. And the ‘cutter’/‘server’ should know HOW to cut the cake to provide the appropriate size slice, as well as quantity of slices to serve. And hopefully send the top layer with the beloved couple to munch on, on their honeymoon. Wilton.com is one perfect place to start, as well as spend a lot of time-learning.

      I was 12 when I began teaching myself. And by 19 I produced my first wedding cake. By 14 I would recommend something simple. But it can be done. I’m hoping this is for a small, intimate wedding. Perhaps you have time to rehearse this, as well. Much luck!

    You won't have to level your layers or trim the crust if you use pan wraps.
    You can buy them or make them from damp paper towels, wrapped in aluminum foil.

      It is a piece of fabric that you buy and soak in water and then put around your cake pan. They lower the temperature of the pan and allow the cake to bake more evenly. Therefore there's less caramelization and no doming of the cake

      It was about 3 miles away, and the central dowel was 1/2 an inch thick :)

    You know if you put wet paper napkins in foil then wrap it around the baking pan it'll bake leveled cakes ❤ its what i do to make leveled cakes

    If U want even cake layers that are crisp free, use cake strips or wet paper towels wrapped in aluminium foil. That way U don't waste cake and it's always even and never burnt

    You made it look easy. Getting a really smooth surface of icing is nearly impossible for me. How do you keep from getting icing all over your cake board? I guess I need practice.

    I really enjoyed watching your cake tutorial, but I have a question. Why do you need to put bubble tea straws into the base of the cake that are level with the cake? How does this support the next level going on top? I understand why the cake dowel goes into the centre, but I am confused about the straws. I am planning to make my daughter's wedding cake this Sept. 2024 so I am hoping to get all your tips and learn from you.

    If you use wet fabric strips or wet paper towel covered in aluminum foil on the outside of your pans, you won't need to trim/level with a knife and it won't caramelize on the edges.

    I always thought it was cool to use just a spatula to ice a cake I use a speed icer when doing my ice base and its in my opinion easier but I'm not very good with just a spatula

    What kind of buttercream? Italian meringue? Simple buttercream? If making a simple
    Buttercream, was shortening and butter used?

      This is just american buttercream! I used all butter, but if you live in a warm place or humid environment, you can definitely swap half the butter for shortening

    If you weigh them and they have the same weight wouldn't that mean the smaller layers would be thicker? Since the pans are different sizes

    You buttercream is so white, I recall you mentioning the butter from 365, but also it seems very smooth. I am thinking it is either warmer or you used more whipping cream. Any advice?

    Why would the pans have the same weight in batter when each pan is a little smaller than the next?
