Cold water, ground ginger with skins on... Sugar. Not boiling water. Make sure sugar is melted goo.. Then pour into bottles, leaving it open for fermentation and the skins will float right to the tops of bottles. Strain and put in bottles/ jars in fridge to get cold and enjoy a refreshing booze free drink...

My wife likes this when carbonated like some on the market which also have no alcohol. Is there a way to make this ferment to a carbonation but low alcohol level? We can only think of boiling it down to a syrup thickness, which would be very strong and adding it to bubbly spring water or club soda. Any suggestions?

Good, but sugar is equal to diabetes. I advise you put all in a bottle and cover it and ferment it for 1 week before drinking, but don't form it as a habit to avoid diabetes.

With this version (that is not fermented) I would imagine that you could use any sweetener that you like. He basically made a tea with the grated ginger. You really only need sugar if you are going to allow the mixture to ferment into a ginger bug to make soda.
