Well done . The soup look proper . I personally prefer to cook the chicken out totally because the broth is best when cooked for a longer time . If whole pieces of chicken is needed I add it in after the first set of chicken is done cooking but bone broth is important to me .
I like to see hiw other homes do their cooking. I would have never thought to scald the chicken and change the water. I always spoon off as much fat as possible. Good point. And I always use two packages of the seasoning packet without using the noodles. Yum

I was never a pumpkin person until I found out it help fight prostate cancer along with soursop, so pumpkin soup is a must for me. I can tell you this Jamaicans make some of the best soup. I could not duplicate my mom's turkey soup she make after leftover thanksgiving Turkey. If your soup don't include dumplings, it's not complete.
