REFRESHING Caribbean Ginger Beer.

    Ginger beer is a staple around the holidays on many of the Caribbean islands. It’s made with fresh ginger root, spices, allowed to ferment for a couple of days and sweetened with brown or white sugar. Some add bitters or lime juice before allowing it to ferment. It’s all a matter of personal preference. The flavor ranges from strong or light but either way it’s refreshing and satisfying.
    I have always found the thought of ginger beer making daunting which is why I have not made it frequently in the past. I honestly felt it was a task that should be reserved for professionals until I tried it myself. It was the easiest thing to make once I figured how to make it. I consulted with my mom who gave me some very helpful tips that ensured the success of the ginger beer. Those tips I have incorporated into the recipe. She did not recommend boiling first but I felt that would strengthen the flavors, just a personal preference.
    Growing up I really did not appreciate ginger beer but now that I am older and can control the result I make a product that I thoroughly enjoy and considered selling.
    If you don’t allow it to sit for a couple of days, you will not be making ginger beer but ginger tea or ginger juice so don’t skip that step.
    This recipe is not too light and not too strong which will make it enjoyable for all.
    Regardless of the name, this ginger beer is not an alcoholic drink. Some folks add alcohol before serving but that is totally optional.

    rice
    Star Anise, optional
    Lime, Juiced, optional

    Good to see the recipe with rice, the rice makes it more potent.
    Oh dear, I seldom never peel mine. I give it a good wash in some water with a little vinegar, break it into small pieces and then drop pieces in the processor. Have never encountered any bitterness.

    If you want it to be alcholic you have to add sugar for fermentation 2 cups or even 3 cups yeast eats sugar and turn it into alcohol and co2 sugar is food for the yeast. If wanted carbonated you add 2 table spoons of sugar and let for ferment for a another 2 days inside bottle it will develop carbonation

    Not only is it probably very festive, but it's without question a super health remedy elixir---ginger, lemon, cinnamon, pineapple, lime, orange, herbs... and you can add other health foods, if you like.

    Growing up as a youngster, this was a must for Christmas. Remembering my mother shouting to my sister and myself to go move the ginger beer and put it in the sun, every time the sun shifts. Talking about wicked ginger beer. Love you mum.😋🥰🇹🇹

    I like how you said Caribbean ginger beer, not like some who would say jamaican ginger beer or trinidad ginger beer it's so annoying these days when you watching a cooking video and everything is authentic jamaican this and that or trini this and that the entire Caribbean food is very similar and all taste good. I don't get it when they live in North America and say authentic Jamaican, and 80% of them can't cook.

      @@horlicks3920 I wasn't debating the .correctness. I realize Ginger Beer is not ONLY made in Jamaica. Beyond the Caribbean Ginger Beer is also made various African countries. Saying "80% of them can't cook" was not only a generalized overstatement but it was also rude. That is what I was speaking to. Hopefully that clarifies what may have been misinterpreted from my previous statement.

      Fermentation - there was very little fermentation because the yeast had nothing to eat. Sugar should be added to before you start the fermentation process.
      Since you boiled the ginger the ginger yeast is gone. You are working off of the yeast on the rice and/or air.
