Your probe is reading all over the place because your checking the temp of your steaks while they are still sitting over a flame on the grill. No wonder the internal temp of the steak rised from 90 to 133 so fast. Your supposed to pull the steaks off the grill and probe them then if your reading is low you toss them back on the grill for a bit
Isn’t the point of these Bluetooth thermometers to check while they’re cooking? Wouldn’t that mean the probe is in the whole time while the meat is on the grill???
Wiuldnt 135 end up medium well done? I can pull them at 119 and they carry over to 140 more sometimes. Dont these carry over? Or is your odeal eating temp higher?
If you keep them covered they will continue to heat up but if you set them out typically they begin to cool fairly quick so it just depends on what you do with then after you pull them out of the oven.
Why didn't you season the sides of that steak? Amateur misteak. Also, I'm not surprised your steaks were done already - that's what happens when you crank the grill up all the way. I've learned over the years that you don't actually want to do that. You'll just burn the surface and you'll most likely overcook. Also, The "hand trick" to find out if your steak is cooked is absolute BS. There are way too many factors going on to ever reliably trust your hands firmness to check if a steak is done - just stick with the thermometer.
