Aaron, I lived in KW at 1619 Atlantic Blvd. many years ago, wish I could afford to live there now. I think the boat you are using is the same I used to have. It was made in Brevard county. A Ganoe maybe? Mine was 17 ft long, with a 9.9 horse outboard . That hull was awesome, no matter how hard you tried to turn it, it just dug in.

The recipe I followed for Hollandaise sauce you cooked it using a double boiler stirring constantly to keep the eggs from scrambling. That also thickens it.

I will never say those words because people never know the whole story or how hard a person has had to work to get to where they are. So, what I will say is this. I am so proud for you and what you have accomplished. I can't think of another person who deserves your rewards more than you. A friend told me years ago, " God knows what he can trust you with". You Need to use a double boiler and warm and thickn up that sauce. And put a lil vinegar in that water for your eggs. And some finely chopped chives as top garnish.
I vicariously live through these videos. I gave up my Caribbean living a year ago. After 5 years in, you were always one medical emergency away from being totally bankrupt so now I'm mainland again starting a hikers life. I do miss living that life. Hey, you're a freash water conch now ! I moved to Key West in 1985. Stayed till 1990. Some of the best years of my life. I had conch take me to a spot, maybe behind little torch. We shot across the back country in and old tri-hull. Nelson took us to this lagoon or ravin. It was maybe 10 ft deep and 150 feet long . A deep channel with a fast current. We used a rope to return to the boat each time. Had our boat limit in 30 minutes. I miss the keys.
We always appreciate good clean content, especially when we watch it with our kids. We try to teach them that God has given us a wonderful world, and we should respect and take care of it, and be grateful for the wonderful natural world and food that he provides. We live in South Carolina and we never get clean water in our area . I’m originally from Florida and hope to take a trip down to the Florida Keys again one day.

Hi Aaron, I found a foolproof way to poach eggs. 1/2C room temp water in a small bowl, crack a large egg in, microwave on high for 50 - 55 seconds in a 1150 W microwave, extricate with a slotted spoon. Use a new bowl and new water for the next egg. Almost always perfect. Good Luck mate.

I've been scuba diving , spearing, lobstering for 15 years, mostly out of Jupiter. But, after watching your videos I was inspired enough to take the PADI freediver course. Thanks for that. I'm a few months away from my 70th birthday, but age is only a number, not a restriction. We winter in Sebastian, but if I get down to Key West in the not too distant future I would like to book a charter, just not too deep. lol . Keep up the great work and livn' the dream.

I totally understand and appreciate the concern. I try not to spend time in the water alone as I’ve seen too many accident happen. But being in the shallows doesn’t concern me nearly as much. I don’t mind doing less than 10 ft alone as i consider it more swimming/snorkeling than anything. No long breath holds. Have way too much to live for. 🙏🏻
I know it's a heck of a lot work to do what you do, and you probably have your share of difficult people to deal with in the business you created, but most of us looking at the images you captured in this video and all of your other videos see paradise.

Congrats on 10 years buddy!! Benedict’s are an art. Practice, Practice, Practice. I’m sure you wanted it easy but putting the egg yolks in a Pyrex bowl and heating up over boiling water helps with the thickness. Next time, add a tablespoon of white wine vinegar. Also add a 1/4 cup of white wine vinegar to the water you poach the eggs in too! You’ll thank me later. Lol😂

New to the channel. You did great job with the poached eggs. Hollandaise is real easy with a conventional blender, you just pour butter in while it's blending. Rough on the bugs this year, my family had a slow year at big pine as well. Will enjoy working through your videos.

You could put the Hollendays over a double boiler and whisk it a little until it gets thicker. When I was a chef, that's how I did it. Great job though guys...it looks fantastic.

Having been in the water and wastewater design/construction engineering field for 25 years, I have to ask you a question: is your house on a septic tank/drain field or sewer system? If on a septic tank system, then I would assume your neighbors to the east of you would also be on a similar system. I ask this question because of how much you use the seawater behind your house to clean fish etc. and since that canal is a dead-end, all of the upstream water flows past your house. Septic tank drain field systems can possibly leach untreated wastewater into the groundwater which will end up in that canal. It's kind of a risky task, although pretty unlikely any bacteria would leach back into that canal but strange things have happened and maybe you would consider my statements. I'm sure that your re-rinse your catch with fresh city water before cooking.

New to the channel. You did great job with the poached eggs. Hollandaise is real easy with a conventional blender, you just pour butter in while it's blending. Rough on the bugs this year, my family had a slow year at big pine as well. Will enjoy working through your videos.

Just curious, what year was that? I live in New York, and houses have always been expensive here. Thats why I unfortunately still live with my parents. I'm 34, so I think were about the same age. But I love to vicariously live through you when watching your channel. You live my dream. Someday I can only hope to have a perfect wife, beautiful house, and fulfilling life as you my friend. From Cali here. I’ve snapped antenna off a 5-8 lb bug and was devastated. They grow back, but to your point about snares being safer, I think you’re correct.
I know it don't mean anything when I say you're living the dream. But I'm actually happy as a citizen of the United States of America you are able to live your dream and enjoy it, I am so happy for you. And I'm glad you make the videos so that I can watch you experience it. It does bring me great pleasure.
You could put the Hollendays over a double boiler and whisk it a little until it gets thicker. When I was a chef, that's how I did it. Great job though guys...it looks fantastic.

I agree about using the snare. I have broken antennas of short lobsters in California. You've got to slam them to get a grip.
It’s great to see people being humble, and just happy with the little they have it shows that you don’t need much to be happy. A simple house with a creek in the back and looks what a happy man. Congratulations to you.

not only are you living your dream but I love it that you live off the water and capitalize on foraging your food from the waters you live on....sweet!! we need to get Tipsy a vest so she can dive over and cool off. thats why she doesn't care about them lobsters because she's concentrating on wanting to dive in ; I could be wrong! however, you can tell she is worried and anxious to see your return! 🙂 wow, what respect you show for us fans to know that you respond to every single comment.... thats tuff! Having been in the water and wastewater design/construction engineering field for 25 years, I have to ask you a question: is your house on a septic tank/drain field or sewer system? If on a septic tank system, then I would assume your neighbors to the east of you would also be on a similar system. I ask this question because of how much you use the seawater behind your house to clean fish etc. and since that canal is a dead-end, all of the upstream water flows past your house. Septic tank drain field systems can possibly leach untreated wastewater into the groundwater which will end up in that canal. It's kind of a risky task, although pretty unlikely any bacteria would leach back into that canal but strange things have happened and maybe you would consider my statements. I'm sure that your re-rinse your catch with fresh city water before cooking.
