    Dear Mai,
    Thank you so much for your wonderful videos! You really inspire me.
    Unfortunately, I have never made sweets or cooked beans before and I know very little about desserts. I froze the anko paste I've made. My bean paste quickly became dry and crumbly after refreezing. I've made some mistake. Can you please tell me how to freeze the paste correctly? Maybe I need to add glucose syrup for moisture? I would be very grateful for your advice.

      Hi, thank you for your comment! Good question!
      Wrap the bean paste tightly in plastic wrap. Place the wrapped bean paste in a ziplock bag and refrigerate. The key is to wrap it twice to prevent it from air contact. Hope it helps!

    I thought my friend gave me red bean paste but when I looked at it for making mochi, I realized it was black bean. I just happened to have 110g of azuki beans so used your easy instructions to make paste. Thanks

    Great video! I just have one question. To use as filling for nerikiri wagashi, do I need to mix it with mochi like the nerikiri or can I just used paste straight away? (the thick version)

      That's a good question! For the nerikiri filling, you can use the paste straight away. Just round into balls and wrap in a nerikiri dough! Thanks for asking! ❤️

    Hi chef. So, I want to make those buns filled with sweet red bean paste. However, I want to prepare the paste myself since they don’t sell it locally. I was wondering whether the beans you used are actually the same as Red Kidney Beans.

      Actually they are azuki beans, a red bean native to Japan. They are much smaller then kidney beans but you can use kidney beans in a pinch!

      With white kidney beans, you will make white bean paste. It tastes different but yes it works! You can check my video on White Bean Paste for your reference.

      Yes you can. Sometimes canned azuki beans are already sweetened with sugar. In that case, additional sugar is not needed.
