    Fun fact.
    My Dad used to work at KFC years ago when he was a teen. And stole some of the spice mixed flour to make some chicken at home. AND IT DIDNT TASTE LIKE THE CHICKEN FROM KFC. So I think the pressure cooker and possibly the oil is the main issue.

      ya, a master chef buddy also worked at a KFC years ago and mentioned that 'all the spices were not as important as the pressure cooking.' Salt/pepper though are important. The whole issue nearly drives me to drink.

    I would love to see this AGAIN... but with another twist... blindfolds, since the brain tend to be a bit biased sometimes, so do all the flavours, get them randomized and then try them blindfolded :D

      figgehn agreed, my biggest issue with this vid is him having a conclusion before trying it, which usually makes it more biased. If he had tried it blindfolded it would’ve been more accurate

    I was a manager for a Corporate KFC. The “Special Ingredients” are purchased from 2 different companies. By contract, neither company, is allowed to deal with each other, in any way. Also, the special ingredients are VERY EXPENSIVE to buy for what it is. It truly is, still a secret. The truth is, it really is the ingredients along with the method of cooking. Pressure fryers really PUSH that flavoring DEEP into the chicken.
    Even if you got your hands on both flavor packets, it would be near impossible to get everything right. You can get close, but not exact. That secret is held by two different companies, and neither know the full combination.

    So fun fact from someone who has worked at multiple kfcs in the US at least the extra crispy is cooked in an open vat deep fryer while the original breading is cooked in a pressure fryer and they're two different types of breading

    As a KFC employee, I can confirm that 99x looks right. The proportions are approximately 11kgs flour to 400g seasoning and 400g salt, with 100g of dried milk and egg mix

    I remember a friend of mine from America came over to visit me (I live in Scotland), and their favourite thing to do was to eat at fast food restaurants because they're allergic to soy, and we don't use soy oil over here!
    To elaborate, in the UK, we use vegetable oil, sunflower seed oil, or just plain old butter to fry things as its harder to get soy over here.

    I worked at a KFC as a cook in Australia and one of the things they stressed was how important and different pressure cooking was to normal deep frying, that may have made a difference to a few of the recipes

      I would believe it, but that is marketing fraud, and if ever found out the company would lose its customers, and at the same time probably be hit with a class action lawsuit, the risk of lying outweighs the risks of saying "11 spices" over just saying "a secret spice blend". Now take into consideration the controversy created by subways foot longs "not being a foot long" ( which I'm not saying it wasn't a stupid court case, it is, very much so, just it's a good example how using exact can work as good marketing, but when that its exactly as said... well ya get the point). The issue with faking exacts is someone can find out by testing it. Not that testing it always works, but the reason you test a hypothesis Is because there could be random variables

    Looking back now i think the reason why some of the chicken didn't come out as flavorful (like the nephew recipe) was probably because Mat and Steph never marinated the chicken before frying them

      @@abhinavyadav13 Marinate might be a bit of a misnomer. You can do what is called a brine. Place the raw chicken in heavily salted water for at least a couple of hours before you prepare the breading. Make sure to pat the chicken completely dry before you do, though. What this does is impart some extra salt directly into the meat and adds to the juiciness. Conversely, you can do a sort of marinade in a milk or buttermilk solution. If I do that, I like to use buttermilk and infuse that with a bit of pickle juice and a smaller portion of the spices that are used in the flour mix.

    I’m not surprised the citric acid made the 99-X taste more similar to KFC. Citrus is such a great chicken additive that definitely improves the flavor especially when fried/baked.

    Hey Matt, I used to work for a poultry processing plant, that prepared the KFC brand chicken. A lot of the seasoning is injected in the chicken pieces at the processing plant. Similar to a brine.

    It's also brined overnight in a buttermilk mixture.
    Buttermilk is as easy to make as adding some fresh lemon juice to milk, and letting the chicken sit in that overnight.
    Probably could get the same results plus a more tender chicken that way.
    Also thinking they may add baking powder to the flour as well, the combination of the acidity would help the batter fluff up more light and crispy like fish batter.

    I bought the 99X a few months back when I first saw this episode. actual cooked it today (oncamera). Its is so close I no longer worry about buying KFC. You must do double spice from recommended and 50% more salt. I also cook it 20 minutes covered after it is browned on both sides flipping once. This gives it the texture that KFC has with its pressure cook method. You will never get it exact without the pressure cooker but the spice is correct.

    here's my food theory: the last recipe you tried with the citrus added to it is the true recipe, BUT because it was made in a small kitchen deep fryer instead of an industrial sized pressure fryer it was slightly different. The other reason behind it tasting different is because KFC is made by sweaty teenagers in a rushed environment that isn't always so clean just gives the chicken that extra oomph that it has.

      I also think the pressure fryer plays more of a role than people think and does something beyond reducing cooking times.
      Double 99x + 100g dried milk + 100g dried egg + 50% extra salt + tellicherry pepper + dredge in buttermilk and egg mixture before breading + pressure fryer + citric acid in the oil = perfect fried chicken? 🤔🤔

    The problem with any taste test like this is that it ignores a hugely important aspect of taste: psychology. People are going to think that what they're tasting doesn't taste like KFC because they know it's *not* KFC. To do this right, you'd have to put every test subject in a KFC bucket, and serve it as if it actually *is* KFC to unsuspecting customers.

    I worked on a marketing campaign for KFC and I can say if citrus was the missing component, it was a complete accident. They took us on a tour of the facilities so we’d know a bit more about the company and explained that only 1 person in the entire world knows the recipe. And to get to the recipe you need 3 people to unlock the vault. So if the citrus is the answer, that was just a happy coincident.

    Keep in mind The Colonel was a fried chicken aficionado, I have no doubt he had 11 herbs and spices in the beginning. But as with many good cooks, a corporation bought KFC for $75K. The Colonel was a cook not a savy business man. He remained as spokesman for commercials and his face is still on the brand. But the contract he signed did not include royalties, merchandising, his face on the brand or did he get paid for commercials. He just wanted to do commercial cause it was fun. And yes Im sure the corporation may have changed the recipe to meet cost reductions. Bottom line NEVER sign anything until an Attorney has reviewed it!!

    I used to work KFC back in the day. The only difference in regular and extra crispy is you cycle it twice. When I worked you went to the fridge to get the chicken, dunk it in a basket to get it wetter, roll it in flour and then onto a tray. To make extra crispy, put it back in the basket in water after the 1st breading, roll it in the flour again and there's your extra crispy

    Soooooo... I have an idea. What if someone has an allergic reaction to KFC's chicken and then sues the company because they didn't specify anywhere what the recipe contains and what all the allergens are and actually wins, will KFC be legally obligated to make the recipe public?       2 big problems: 1, they do have disclaimers for a LOT of ingredients, and I'm not sure how many are actually present, not to mention not all ingredients have people allergic to them, and some ingredients may be used so sparingly in the recipe that they would not trigger a reaction.
      2, that still wouldn't tell us the ratios to use. 99-x already gives us an ingredient list, just not the ratios.

    If the 99x was pressure fried it would taste exactly like kfc so it would definately be 10 out of 10.The seasoning is named 99x because Colonel went to his friend that has a seasoning company and told him he wanted to replicate his original secret blend.So he gave his friend a sample, and he got it to taste like Colonels original blend.So his friend called it 99x because it was 99 % influenced by Colonels original recipe blend and 1% his.

      It’s interesting how it isn’t just the ingredients that make all of the difference when you cook it’s also how you cook that matter as well the cooking method/techniques is important and then there are of course making sure that the foods stay as fresh as possible the freshness of an certain ingredients is important as well it’s probably why restaurants that have garden on-site is always taste good. And it’s also why going to the local farmers market and getting your produces there is always delicious quite frankly is the reason why eating locally and seasonally is always an common practices among diverse of cultures. And of course is why restaurants make sure to be as much as organized as possible making sure you have your ingredients ready the instant you started cooking. The whole mise-en-place, A Place for Everything and Everything in Its Place mindset.

    Fun fact from an ex employee the spices aren't actually mixed into the flour, the chicken is marinated in a special machine before it goes into a tub of plain flour just so it can get coated and then into the oil. I think the marinating process is what everyone gets wrong but it does make a difference.

      I worked at KFC back in the 90's we marinated chicken in some salt/water solution in a tumbler. Then it was, a box of salt, a small package of milk & egg mix , approx a 1lb package of just seasonings, and mix into 25 lbs of flour. We used bricks of shortening

      what i’m getting from all these replies is that the process for making chicken is changed up which could change up the taste and it also depends on location what “process” the chicken goes through before getting to the consumer…so i imagine it’s hard to find something that tastes like all of those which is why pinpointing the recipe is even harder

    As someone who worked at a KFC for a few years, I can say that not all KFCs use pressure fryers, because we sure didn't.

      You have to for original chicken, but the extra crispy chicken doesnt need a pressure cook. This is because of the Milk and Egg bag goes wrong in the open fryer.
