    The meat is pink because it a wild trout, not farm raised. So good.

      The meat is pink to red because their diet is composed of minnows, insects and larvae. Farmed trout eat cereals and processed meat.

      I've caught stocker trout that have red meat. If the fish was stocked a while back and has had the chance to forage for natural prey, depending on prey it will get the red meat. If the trout feeds on snails it will never get the red coloration but if it feeds on daphnia it will definitely get that color.

    Hey @FishingWithJ
    The color of meat on a fish has a lot to do with two different factors - The blood in the meat and the diet of the fish.
    The blood in a fishes body can actually really enhance the color of meat - you can see it for yourself by cutting the gills of a fish next time and letting it bleed out in the river. By doing this I can almost 100% say for certain that the meat will be whiter alongside having the added benefit of removing potential harm that was in any of the blood you would have possibly consumed. Leaving the blood in the fish is also fine, however it usually can cause meat to be pinker and darker in tones.
    The rate at which the fish is decaying after its death and proper icing / handling can all really affect the color of a fishes meat. Fresh salmon thrown on ice the moment they are caught tend to have a really nice pink if not almost orange fillet. Same goes for trout. If however, you don't get to the fish in a timely manner (such as instant icing) the blood has time to spread and pool in certain areas, if not escape the fish from an open wound!
    Another key difference between Pink and White in meat has a lot to do with what the fish is consuming in their daily diets such as eating other fish versus eating simple small insects.
    Both are huge factors into the coloration of meat.
    As a tip from me, (when fishing sandy patches in rivers near rocks) try small jerk baits around 3/5 inches in size, with a lead weight above them roughly a foot. Use the lead weight to drop the jerk bait on the bottom of the sandy river - and just jerk the bait like you normally would while really to keep the line tight. I have caught many (MANY) trout hiding around rocks on sandy river bottoms this way.

      yes but overtime the meat of the stocked trout usually changes to a natural color (orange/pinkish). They are called holdover trout which basically means a stocked trout surviving and adapting to become basically wild

    Man thanks for sharing the video. I've been away from CA for 20 years lived in Clovis and Shaver Lake (Sierra Nevada Mountains) was absolutely my favorite place to go and explore. My dad use to take us when we were younger and catch wild trout and man it was fun.

    Trout also have a slim around them you need to wet your hands before handling them ... native wild trout have pink meat like salmon that fish wasn't as pink as wild trout but the longer they feed on bugs and natural things the more pink the meat

    first i wanna say: sure everybody can prepare and eat the fish they prefer.. but now my personal opinion on what you did:
    - catch and release is ok - especially when you catch young fish or females full of eggs, etc. BUT i don't see the point in making fish suffer if you just do it for fun without the intention to "use" them (there is nothing more tasty than a fresh fish caught by yourself)
    - trouts are very sensitive fishes. if you destroy their natural skin coating or even push them too hard, leave them outside the water for too long, etc, they often die (at least that's my experience)
    - when you cut the fish for gutting, don't stab the knife too deep inside it since you may cut its organs (especially if you hit the gallbladder - not sure if that's the correct english term - and it sucks into the meat, you are screwed)
    - remove the dark part along the spine as you said. it's the fishes kidney and it contains all the bad stuff, smells and tastes terrible (especially if you gonna put the fish into your freezer it's gonna last much longer if you clean it perfectly)
    - you should only remove the gills if you are not planning in fileting the fish. don't cut off the whole head because under the eyes you find its cheeks. and those are super tender meat and really delicious - especially at such a big fish
    - also for trouts you don't really have to remove the scales since they are super small and you won't even feel taste or recognize them when eating (it's only a waste of time, do it if you feel better after that :D )
    - don't put the fish into aluminium tinfoil! first of all it's not really good if you put it on such high temperatures on your grill and also it tastes so much better if you just grill it on its skin. just add some salt and a little pepper as seasoning on the inside, rub some salt on the outside as well. stick inside maybe also some herbs (dill or sage are great options - not combined tho ;) ) and at some lemon after it's done.
    seasoning is ofc your own taste (you may also use garlic and stuff). but as i mentioned: grill it on direct heat on its skin. with such a big fish you probably have to let it rest besides the coal for a while to not burn it too much.
    important is to NOT overcook it! 23 minutes sound way too long to me (ofc if you contain it in this foil it's gonna be steamed and not really lose much of its juice)
    but to me it's such a waste to throw away that skin! if you ever had some golden, crispy trout skin with it's tender meat, you don't wanna go back ;)
    - as others already mentioned: the color of your fish is because of what the trout eats. a trout belongs to the family of salmons so it basically behave kinda similar. if it eats a lot of bugs, small crab-things and stuff, their meat becomes slightly pinkish to orange.
    sorry for writing such a long comment. but i see how much pleasure you have in going fishing and how passionate you are about it. and i just love to see others sharing the same passion as me :D

      not usually a good idea. At least where i am from It would attract wild animals and you dont want something rolling up on you while your fishing.

      Not your average Joe it’s the best! I love bass fishing as well but in my area you have to have a good boat to get to the spots. So, a majority of the time now I go up in the mountains and search for new creeks to fish

    Natural trout from clean waters are usually pink. They also smell like fresh meat, not the usual fishy smell. You are a lucky guy!

    With bigger trout when removing the "bloodline" just use a tea spoon it's just as easy as that.
    And the color of the meat is usually what they eat, like if they eat shrimps or something the meat usually turns orange/red.

      In Montana, some of the lakes have a lot of fresh water shrimp that the trout feed on. I've caught many that have a pinkish caste to the meat. Absolutely delicious trout.

    I've been fishing for trout for almost 15 years and never once have I caught a trout that's meat is white... I've actually got 3 big brook trout in my freezer right now from last week. The color of the trout's meat has always been a varied color of faded pink to deep Pink almost a light redish. I live in Maine however so I don't know how it is for you guys.... Typically the lighter the color of the meat means the less healthy the fish was in it's habitat. Not a lot of oxygen in the water, not a lot of good food, that sort of thing. Typically Native trout have the deepest of pink meat because they grow knowing what to eat and how to get food in the water they are in, and when the water changes. (and they taste much much better for it). I always feel bad taking a native, because naturally occurring trout are a blessing to the waterways. I typically try to let em sit back in the water.

      @@BillGoneFishing Depends on where you are, in my state and most states around me it's illegal to take live fish from a water way and transport it anywhere, you either have to kill it, or release it alive immediately. Ideally if you have the option you should kill it and put it on ice in a cooler to keep it as fresh as possible with out cleaning it as cleaning the fish cause lead to issues should a game warden stop you. I recommend looking up your most recent fishing regulations as the bag limit on trout changes state to state and can change dramatically every year. The bag limit on trout and salmon in my state is now 5 brook trout of at least 6 inches, 2 brown trout of 8(+) inches, 2 rainbow trout of 8(+) inches, and 1 landlocked salmon of at least 12 inches, but just 2 years ago it was a total limit of 5 trout per day, with no more than 2 being brown trout and no more than 2 being rainbow trout. But you could have 5 Brook trout, or 3 brook trout and 2 browns or rainbows, or 1 brook trout and 2 browns and 2 rainbows, and it's dramatically different now so always look up your most recent laws. Enjoy the water and enjoy your fish! :)

      You also live in Maine so the trout up there are most likely natural and farm raised. The rivers and streams that run through main are unlike I’ve ever seen. One can only wish to fish there.

    The color of the meat has everything to do with their diet. I fish back country lakes that are stocked every few years. When those fish survive from year to year their meat color changes as well. I have caught rainbows that resemble a football more than a fish because they are soo fat. Their meat is always blood red in color. No different than the salmon out of the ocean.

    "Normal farm-raised trout" = white meat.
    "Natural, wild trout" = Orange to pink colored meat. MUCH TASTIER! HEALTHIER! Better Omega 3 fat content than farm raised

    The reason for the pink meat is because of their diet. Stocked trout usually have white meat because they are fed trout pellets (the trout still tastes good) but this is not what they would normally eat out in the wilderness. Wild trout eat flies, minnows, crayfish, and even younger trout. This is why the meat is pink (and thats a good thing)

      Diet I believe is the main thing but also the sex of the trout. wild jacks (males) at certain times of the year can be quite white flesh compared to Hens (female).
      I just spent a week fishing the Tongiriro River NZ for the winter runs all the fresh run Jacks had white flesh compared to the fresh run Hens who had very pink flesh.

    I enjoyed your video. You did an excellent job catching and preparing your trout. I am a Troutman from Central New Mexico raised by my dad to be a trout fisherman at the early age of 5 years old. I am 63 years old now and in a location where I can't fish for Trout so I miss it. The only difference I have from you in cooking is scaling the fish as you did but leaving the skin on later for flavor. Its like cooking a steak and leaving a little fat on it for flavor. I do have another easier way to server up the fish at meal time but unable to show you.. Dad always served fried potatoes or bread as a side dish in case you accidentally swallowed a bone.     Stocked trout are white meat because of what they eat . Wild trout such as rainbow, brook etc. the fish you caught was a left over that had been feeding on wild things . The meat on a wild trout is the pink as a salmon . Your fish wasn't that pink compared to a wild trout

    Favourite way to cook trout and barramundi. Try putting the fish on a bed of sliced onion and wrapping it so it's not totally airtight. You'll get caramelisation and better flavour imo

    Hatchery trout have white flesh. It has pink flesh due to feeding on natural food and not hatchery pellets.

      True. And also the dorsal find is clipped meaning it's a hatchery fish . And also hatchery fish suck to eat . Because they have Ben grain fed all there younger life. The meat is not as firm as a native fish . Just f.y.i

      That fish looks like a stocker and not a native. The dorsal fin is a good indicator. If the fish was stocked a while back it will have the chance to feed on natural prey and therefore getting that same color as wild fish. Trout that feed on daphnia really get that deep red color
