    Yummy! Some of us down here in Texas would also add some fresh…cut it off the cob…corn to the rice

    We just had Yellow Rice with our barbequed chicken tonite! I ALWAYS eat my yellow rice with a side of cottage cheese and sliced tomatoes. So so good!

    I made this tonight with organic brown rice from Costco, and split the fats between EVOO and butter. High pressure for 25 mins. Then 10 mins NR. Great recipe, will definitely make again. I am trying to use more tumeric in my cooking and this is a delicious way to do it. Thanks Jeffrey!

    I am not a big onion lover but there a restaurant in Bolivia that would slice onions really thin and then really rinse them in water. They are wonderful on pizza that way and I am sure other things too

    This is such an easy, quick and tasty dish. I fry some onions in half of the olive oil with some garlic first and then add all the other ingredients. When it's a hot day, I make it in the mornings and don't open the lid until lunch - pot is completely off. It's perfect with some Tzatziki and salad !

      @@RPSchonherr on the stove for each cup of dry rice I add 2 cups broth, garlic or 1 tsp garlic powder, 1 tsp turmeric, ginger and 1/2 tsp cumin. My husband likes black pepper so I add 1/4 tsp per cup of rice. I fry the rice with the spices in olive oil for a few minutes until half of the rice is brown, I do not rinse my rice, I add the broth and let it come to a boil for about 2 or three minutes then put a tight lid on and turn the fire down to low for 10 minutes for one cup of rice, 15 for 1 1/2 to 3 cups of rice, then turn off and let sit for 10 minutes and then fluff. My husband enjoys it with fresh diced scallions on top. Enjoy!

    My wife and I were literally just talking about making Spanish Rice as a side dish for another recipe within an hour of you posting this recipe. I totally have to try this but I am definitely going to add the chili powder. Question though: Do you think adding tomato sauce to this might be overkill?

      You could add that. Kid dad (Dominican) sometimes adds tomato paste to make it that color, sometimes tomato sauce with green pepper, onion some water, seasoning and puts it on top of white rice.

    What happens if you just use the rice button? I might be researching before buying mine right now 🤣👍🏻 And, can you cook the beans with the rice, like that you see in the packaged stuff in the store? Red beans & yellow rice?I really am not good with rice.. That's half of why I want the Instant Pot 🤣

    Why would you not use the rice function? What’s the use of having a function if it’s not used? (I use only the rice function. Same measurements, same rice (Jasmine). It comes out perfect.

      Turmeric is a little earthy and bitter, maybe a little peppery. It’s mostly used for adding a yellow color to food and for reducing inflammation in your body.

      A bit earthy, maybe very, very slightly bitter. I use it in curry recipes mostly. I've accidentally skipped it before and was surprised at how much that changed the depth of the curry flavour. Underrated spice.

    I found that too much turmeric will make it bitter so don't use more than you need to make it yellow.
