We also have granted Thai citizen to millions immigrants from surrounding countries. So Thailand is a melting pot of Thai, Chinese, Cambodian, Lao, Malays, Indian, Vietnamese, Karen, Shan people, Hmong, Mon, etc. Since there's a policy of ASAEN free visa, we have more of migrant workers and latent population, so those you encountered in Thailand sometimes are not Thai citizen. Maybe you should try traveling to off the beaten path like Nan, Lampang, Phang-nga, Chumphon, Isan provinces. Cheers! 🙌🙌

Yes, pick both for tourist. However, in the long run, especially for retirement or settlement, then Thailand is the place for now. Looking in from all perspectives in living standard to health services as well as safety, pollution all the way down to political system & culture and tradition in human rights. Though, if you have enough money, why not invest in Vietnam while living in Thailand, the country are not that far apart.
Life is to short to choose so what you want is living a good lifestyle while you still can and currently quality in value for money from these aspects is definitely far better in Thailand, but also having enough as back up for any rainy day is a must. Vietnam is cheaper as a country for investors right now. There are many good spots with amazing views & in the near future bricks & mortar will hold faster profitable growth value as it is a seafront country. Then when the right time comes in Vietnam, it is finally down to you on the personal preference decisions.
