It doesn't keep indefinitely. Different fermentations keep for different amounts of time. For lemon and ginger like this, once it's reached the fermentation you want (usually after a month) move it to a cool dark place (fridge works). This slows the fermentation process and allows you to use it slowly for up to 6 months after making it.
@@JoshxIZ I have not tried salt fermentations yet. I have done vinegars and honey. I've also made tinctures... which isn't really a fermentations but more of an infusion with alcohol... Eventually I'd like to add a few more to my skill set.
Tablespoon in hot water. Mix it with your tea. Tablespoon of this with club soda. Or you can have a straight teaspoon of it... Although I don't recommend...
