GAVAR PHALI (CLUSTER BEANS) SABJI
Preparation time 10 minutes
Cooking time 15-20 minutes
Serve 2-4
Ingredients
For Sukhi Guar Ki Sabji
2-3 heaped tbsp Mustard oil, सरसों का तेल
½ tsp Cumin seeds, जीरा
½ tsp Fennel seeds, सौंफ़
1 large Onion, chopped, प्याज
A pinch of asafoetida, हींग
2 medium Potatoes, roughly sliced, आलू
400 gms Guar beans (trim tip & tail, finely chopped) ग्वार फलियाँ
Salt to taste, नमक स्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Coriander powder, धनिया पाउडर
¼ inch Ginger (peeled & finely chopped) अदरक
1 no. Green chili (less spicy & finely chopped) हरी मिर्च
1-2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
½ tsp dry Mango powder, आमचूर पाउडर
For Rasse Wale Guar Ki Sabji
2 heaped tbsp Mustard oil, सरसों का तेल
½ tsp Cumin seeds, जीरा
½ tsp Fennel seeds, सौंफ़
A pinch of asafoetida, हींग
1 large Onion, roughly sliced, प्याज
½ inch Ginger (peeled & chopped) अदरक
1 tsp Turmeric powder, हल्दी पाउडर
2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
2 tsp Coriander powder, धनिया पाउडर
1 cup Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
2 medium Potatoes, roughly sliced, आलू
2 tsp Jaggery (optional) गुड़
600 gms Guar beans (trim tip & tail, roughly chopped) ग्वार फलियाँ
1 ½ cups Water, पानी
1 large Tomato, roughly chopped, टमाटर
1-2 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
1 tsp Sugar, चीनी
1 tsp dry Mango powder, आमचूर पाउडर
Salt to taste, नमक स्वादअनुसार
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Sukhi Guar Ki Sabji
● In an iron kadai, add mustard oil, once it's hot, add cumin seeds, fennel seeds and let it splutter well.
● Add onion, a pinch of asafoetida and saute for a minute.
● Add potatoes and cook it for 4-5 minutes on low flames until half cooked.
● Add guar beans, salt to taste, turmeric powder, degi red chili powder, coriander powder, ginger and saute it well.
● Cover it with a lid and let it cook for 7-8 minutes on low flames.
● Finish it with green chili, fresh coriander leaves, dry mango powder and give it a good mix.
● Transfer it to a serving dish and garnish it with coriander sprig.
● Serve hot with roti.
For Rasse Wale Guar Ki Sabji
● In a non-stick kadai, add mustard oil, once it's hot, add cumin seeds, fennel seeds and let it splutter well.
● Add onion, ginger and saute for 2-3 minutes on medium flames.
● Add turmeric powder, degi red chili powder, coriander powder, curd, salt to taste and cook it for a while.
● Add potatoes, jaggery and let it cook until the potatoes are half cooked.
● Add guar beans, water, cover it with a lid and let it cook for 10-12 minutes on medium flames.
● Finish it with tomato, fresh coriander leaves, sugar, dry mango powder and give it a good mix.
● Transfer it to a serving dish and garnish it with coriander sprig.
● Serve hot with roti.

This is totally a new recipe for me, I've grown up eating this made in normal oil, mustard seeds, ajwain, koota hua garlic & ginger, add turmeric, chilly & dhania powder, add guvar, potatoes, (can also add aubergine) salt to taste, some water, cook 10-15 minutes, add tomatoes and ready to serve OR make dry one same way but just add til seeds, this is just as delicious too you can just have guvar, or add potatoes and aubergine or either of them, my family loves dry guvar with aubergine....turns out really yummy...(never acknowledged that guvar is bitter in taste 😂
Jab mai MP me rehti thi tab bilkul bhi nahi khaati thi....ab Tamil Nadu me rehne aayi ..uske values pata chalne ke baad mai bhi khane lagi...bachchon ko bhi aadat daali hoon.
Mai ek sabji ko kitne tarah bana sakte hai utne tarah try karti hoon ... TH-cam ke help se .....itne saare states hai....hazaaron styles milte hain....par kuch tho zaroor try karti hoon...taaki bore na ho jaaye ...ek hi ek style me khake .❤

This is just for your knowledge.
In Bengali Cuisine I prepare one dish, known as Labra. This is mixed veg in mustard oil, goes well with basanti Pulao or Gobindo Bhog Khichdi. It is a time consuming since needs to be cooked in low flame. This preparation involves around 10 vegetables. No garlic and onion is used.
Chef Ranveer apne to Guar Phali ko upgrade kar ke business class mein saja diya. Ab har koi gaye ga main hoon hoshiyaar mujhe guar se hai pyar. Thanks for sharing, Ranveer.

We in Gujarat use Ajwain in tadka instead of jeera. And no use of sugar/ jaggery. Pepare dry guwar subji without potato. We also cook Dhokli with guwar both dry and gravy

Aloo is my favourite vegetable. It's actually the fav of everyone from West Bengal issi liye yaha ke Chicken curry Mutton curry aur Biriyani mein bhi aloo daaltey hai.

Yesterday I made gavar ki dry sabzi with all ingredients you mentioned and in end by adding lahsun n phalli ki chutney n then cooked for few minutes.
I also make it in very simple recipe onion,green chilly, gavar salt n pepper. That's it My dad loves this way.
Another recipe... My mother in law was cooking it tariwali sabzi with onion, n all dry spices, potatoes, tamato, brinjal, gavar, and sukha bombil ( dry bombayduck) Awesome taste❤

सर नमस्कार मे आपके सारे वीडियो देखता हु अच्छे भी बहोत लगते ह मे राजस्थान के शेखावाटि से हु हमारे यहां गवार फली को काचरे के साथ बनायीं जाती ह और बाजरे कि रोटी के साथ खायी जाती है. बाकि आलू गुवार यह गुजरती fusion है राजस्थान मे तो गुवार कि फली मे खटाई काचरी से लायी जाती है

Followed your recipe exactly then it took more time as the fali was not as tender as shown in the vedio. Both potato and fali took time to be soft and without the taste of rawness. Then next time I steamed both the things and followed rest of your recipe it was so yum कि बस पूछो ही मत क्योंकि बता नही सकती टेस्ट बड्स बोल नही सकती एंड वोकल कार्ड टेस्ट नही कर सकती। Loved this new addition to my list of vegetables ❤

Aaj ki sabji to bahot pasand aayi.hum log sukhi subji jyadatar banate hai aur usme jaggery dalte hai gravy Vali kabhi banayi nahi hai lekin ab vo bhi try karenge.this vegetable is very tasty and full of nutrients.thank a lot chef

Very nice receipes with two variations- gravy and dry. We do this with one more variation. In telugu we call it pulusu bellam kura. Gavar ki palli cut into small pieces, a tadka with urad dal and chenna dal. After add some jaggery (bellam) and tamarind paste (pulusu). It goes nice with rice and Rotis. We also use normal refined SF oil.
These gwarphali dishes were a masterpiece! You’ve truly turned healthy into heavenly. Can’t wait to taste what you whip up next!

For guvar fali tadka we add carom seed ( ajwain) it balances the bitter taste

When overmatured guar fali is dried in hot sun. Before usi g fried in oil like papad sserved as small snack. Before drying fali soak in tirmeric and salt. Tastes better. After frying.

We make gvar fali chips with dried gvar fali, in Rajasthan. And then add salt and chilly powder. It’s a great snack!
I add urad wadi also in small pieces in dry gwar ki Subji to make it more spicy
Guar fali me atte se bane chote pende dal ke banate hai vo bhi bhut tasty sabji banti hai

90's mei nainital pahado mei jab hum the wahan first time khaya tha humne ye gwar fali jisko Kurthi bolte hain Kanpur Unnao Lucknow mei (I live there now from year 2000) .
Ye bina aloo ke bahut achi lagti hai chahe paratha roti ya sach bolu sukhi bhi taste so much.
