    Light & fluffy what a fabulous recipe ! I divided the dough into three batches, plain, raisin and dried apricots. This recipe is a keeper. Thank you x

    i have used the same method for scones for years. what i found is that as much as i liked making scones i would sometimes put it off or change plans because grating frozen butter annoyed me. so that i can more quickly make a batch, i grate from-the-fridge sticks of butter, usually four. i freeze each grated stick individually so that the process comes together faster when the family gets a craving for scones.

    I just came back from traveling in Ireland, and my husband kept reminiscing about the fresh scones we had on one of the farms and in other places. I'm a pretty experienced baker, but I had never made scones before. These were simply outstanding. I didn't have self-rising flour, so I followed your instructions to make some. I also replaced the raisins with craisins. I needed a bit less liquid, but that's normal since we have pretty high humidity in Florida. Thank you for this recipe. My husband loved it too!

    Found out I’m Irish on both sides and now I know why St. Patrick’s Day has always meant a lot to me. I’ll be celebrating this year by attending a local Parade and making Corned Beef and Cabbage (as I do every year) and now these Scones. Absolutely perfect! Happy St. Patrick’s Day 💚!     Besides my family, scones are what I miss the most about Northern Ireland! I have tried several recipes and they have never lived up to the true “Irish” scone taste. This recipe most certainly did! Thank you!! As well, your direction and tip were dead on. I’m an instant fan and have now subscribed to your channel. I look forward to binge watching your vlogs.     I baked these and they were perfect!! I recommend baking for at least 20 minutes for a pretty golden color.

    Hi Gemma, my husband and I have never eaten scones, so we thought we'd give it a try with scones I bought at the supermarket. Well, lets just say we were not enthusiastic about them. So I tried your recipe and wow they are delicious! My husband came home from work as I took the scones out of the oven, so he could dig in immediately! He loved them and said that it adding nything to it like jam or butter was necessary: they were fluffy (not too fluffy), sweet but not too sweet and the toplayer was crunchy because of the milk/egg trick you showed us! Thank you very much, Gemma. I am on to more bigger and bolder baking!

    I don't have a grater, but I used my food processor to pulse the butter and flour. It turned out perfect!

      I also use my food processor, as I've never liked rubbing butter into flour. In addition, if am making plain scones I add most of the liquid and carefully pulse until the dough just comes together. The whole process is so fast I usually end making two or three batches. So lots of light and fluffy scones for freezing! Yum-yum!!

    I love making scones I usually make mine with cranberries, orange zest and ginger , strawberries, blackberries or raspberries. Your right on with the frozen butter for pastry and baking some goodies.

    Hi Gemma, I tried making them and they turned out absolutely perfect! Hv tried many scones recipes in the past and they always turned out rock hard or failed to rise for some reason. Your irish scone recipe is a keeper. Thank you for sharing it.

    I always wondered what they do with the left over egg that they used to brush the product with. Saving the little bit and putting it on the scones makes a lot of sense. Will try it for other recipes too. Thanks.

    I love savory cheese scones (but I usually omit the mustard most recipes suggest) especially if they have extra cheese sprinkled on top before baking.

    Made these today and they were delicious! Gemma clarified about the flour in the comments on her website, so for anyone wondering, do NOT add more baking powder if you are already making your own self rising flour. For the 680g of plain flour you just add 4tbsp and 1/3 tsp of baking powder, total.
    Also, she doesn’t mention salt but I think a bit of salt should be added to the mix

      Hi. It must have been an oversight on my part. However, to clarify, this recipe does use self raising flour (store bought or homemade) and a separate amount of baking powder.
      Baking powder is a very important raising agent for this recipe since it leavens the whole recipe mixture instead of just flour. Therefore, with all other heavy ingredients involved, it’s necessary to use a lot of baking powder to give the scones a decent rise.
      You can reduce it but your results will be denser.
      Hope this helps.

    What an interesting scone recipe.... A tip I know with making scones. Do not twist the cutter as you cut the scones. Just press in and out. For some reason scones rise more doing this and are even fluffier as you are not working the dough more.

    These scones look so delicious I'm not Irish but I agree with your theory a cup of tea needs a scone. I like drinking chai tea or coffee, and tea also I can see my self eating these. with any of those drinks mentioned above. Thank you for this recipe I'm going to give it a try.

    Hi Gemma! I just made a half recipe today, a day before St. Patrick's Day. Grating the butter is genius! And your tips about making my own self-rising flour and not overworking the dough were so helpful. I had to have one when it was still warm, and it was a bit crumbly but oh, so crunchy on the outside and soft on the inside. Next time I will make a full recipe and freeze some. Love your videos and recipes - thanks for sharing!

    I don't know how you could improve on the original because they were fantastic, but these are making my stomach growl! I grated the butter just like you showed with your original scones, it's genius!💖☘☘☘

      Really no need to grate butter! By rubbing in the butter/spead the taste is mixed throughout the dough.
