Apple crumble has always been one of my favourites, and my speciality when I was a chef. I tended to cook the apples before in a pan, but I once had no choice but to use a sweet apple instead of the Bramley. I really wish I knew the name of it, because it broke down well, and tasted gorgeous. I didn't need to put as much sugar in the mix and it tasted more natural and appley. So since then, I've been trying different varieties to see if I can replicate it, but no success so far. Also, quite by accident, I burnt a pan of sauce, but loathe to throw the lot away, I just scraped the uppermost off, and found it had a caramel type flavour to it. Wonderful. But I don't recommend ruining a pan every time you want to achieve this. Since then, I've tried to add in some caramel, but never yet achieved the same result. My crumble, though, I think I have mastered. I use brown flour, soft brown sugar, and oats, and before it goes in the oven, I sprinkle some Demerara on top to caramelise and give it a light crunch.

So, Gemma....here we are now in October 2019 and it was my turn to fix a dessert for a get together after church, and this is perfect for Pennsylvania apple season. When I uncovered it to put on the table, a little boy said, "oh...it's an apple crisp!" and I replied with a cheeky grin, "well, actually it's an Irish Apple Crumble. I learned how to make it several years ago on TH-cam from a lady to went over to Ireland and made it with her mom at Christmas time", to which his mom replied..."Irish?? as in 'Bigger Bolder Baking'?" We both cracked up laughing! We L-O-V-E your recipes!!
Wish I found this recipe before i started making it. Why i like this recipe so much is, because you gave measurements in gms as well as cups. I just prefer following recipes which uses cups measurements, so easy. Oh yaa, forgot to mention, i love Kerrygold butter a lot. When i make Ghee( clarified butter) which we use in Indian cooking from this butter, it turns out just like my mum used to make in India from churning cream and then butter and finally Ghee.
Should have said and I'm from and living in Co.Mayo, which for those that don't know is in the West of Ireland. Traditional food and ingredients are the best, noting like home cooking and baking worth all the work

Exact same recipe I used in school in London except we added mixed spice. I followed your mother’s instructions today but used unrefined brown sugar and tweaked the topping by adding some ground almonds and a few crushed walnuts. It’s lovely but sometimes poignant how dishes evoke memories. Thank you.
Ria, that is so lovely to hear. You probably had the same cookbook at school too. It is easy to tweak this to suit your taste too. Add an egg and you will have a cobbler, delicious too :)

We have a Granny Smith apple tree in our garden and is very prolific. Lots of apple pies and crumble and put in the freezer for winter! Lots of fresh cream but I like a bit of sweetness. I also add a few seeds of vanilla. Love from Auckland New Zealand, mid summer here and gorgeous blue skies!
Your video hit my heart: I have my Aunt Eileen's handwritten recipe for Apple Crumble but I've never made it because my Mom always made Apple Crisp. You and your Mom make it look so easy that I will try it when the McIntosh apples are ready this month.

Ah! that is so nice. Yes, the apples we use for this are very sour, you really could not eat them in your hand, but they are delicious when cooked with sugar. I am happy that oyu like this one :)
haha I would agree with your mom's statement that there is no bad weather only bad clothes but until just a few days ago here it was -45 to -55 C with white out blizzards every 2 or 3 days. Definitely the time for plenty of hot food and not going outside
Oh, my Mum would never have experienced those temperatures, Ireland has a very moderate climate, hardly ever below freezing, or above 25C - lots of rain though! :)

You and your Mum are so sweet together and beautiful, too! I grew up with that same casserole dish, too, and I actually have three of them right now. There are some dairies here in Pennsylvania, USA, where we can buy cream and butter from grass-fed cows, and it's so very good!

Fabulous I slightly changed and put in two and a half tea Stones of bicarb and a half teaspoons of baking powder as well as buttermilk they turn doc fantastically a baked mine for around 15 minutes at 200 degrees. I'm no cool at making cinnamon rolls I've also discovered putting chocolate Nutella in the cinnamon rolls rather than the brown sugar and cinnamon makes a beautiful chocolate bun you can also use the recipe lemon curd and a little bit of vanilla custard to your dough . handbag let you bake the cinnamon rolls absolutely fantastic then make a vanilla buttercream icing days are really good for Easter so many of your recipes I have slightly modified to be my own I will constantly keep you updated with the little tweaks I have made to your recipes for the cinnamon rolls with lemon curd and vanilla cream icing is absolutely fantastic thank you so much
I made this for Samhain (Halloween) dessert the other day and it was absolutely delicious! Everyone loved it, and my ancestors also seemed to enjoy the serving I left on their offering plate. I will definitely make this again and again.

Apple crumble is what I first learned to bake as a child too! I like to sprinkle some cinnamon and sugar on top of the crumble before cooking it though, I think it goes so well with the apples :D
i literally dismissed apple crumble for most of my child hood cuz i was more of a chocolate type of girl but i finally got to making it and it tasted REALLY good so thank you Gemma you got me trying more varieties!!!
Butter, flour and sugar is exactly how I make my apple crisp and I slice my apples and I use cinnamon too. After my visit to Ireland I realized that your cows have the best grass to eat because they can lay down and take naps and chew their cud. Our cows in Kansas graze all the time because the grass is not as lush as yours.

I made this and couldn't even take a picture, it disappeared so quickly! Very good! It reminds me a lot of "apple crisp" which is something my mother makes and she adds oats with the flour and butter. I like this version of the topping a bit better though (it was generous and the topping is as good as the filling). :) I plan to make this again and again! I'd like to try it with other fruits!

Basic crumble. In the US we use Granny Smith apples, and some people add brown sugar and oatmeal to the topping, and nutmeg

In Norway we almost have the same thing! But we have breadcrumbs, apples and cream.

I always put cinamon and nutmeg in my crumble , aswell as using light brown sugar. You can also add vanilla extract, which tastes really good.

I made this and couldn't even take a picture, it disappeared so quickly! Very good! It reminds me a lot of "apple crisp" which is something my mother makes and she adds oats with the flour and butter. I like this version of the topping a bit better though (it was generous and the topping is as good as the filling). :) I plan to make this again and again! I'd like to try it with other fruits!

You are right Laurie, but they soften really easily, are super sour, and really delicious :) You cannot eat these as an eating apple!
