I'm not actually a big fan of their stave finishes but this one was excellent. At least the best I've tried. Still has that hot tannic raw wood quality I don't care for but the rest of it is like chocolate cherry coffee. Glad I picked one up. I also have a Cellar aged, which is quite good, but I don't think it ever blinds well. The palate is easily influenced and usually favors bolder flavors that stick out, especially with higher proof offerings where the palate is overwhelmed almost immediately. Cellar Aged has more subtle depth and nuance that needs to be appreciated on its own.
You make a good point! When I drink Cellar Aged by itself, it’s amazing! Up there with the best… but when drinking with or against others, ya it doesn’t hold well. I’ve also seen many many people say the same, it fails in blinds. Weird.
