      I don't care about the info, altho some is useful to me, but I just love your face and attitude and above all else - "come with me..." to do a pointless turn

    i’ve also learned you can’t go wrong with doing a recipe by weight. 100 grams of flour is always 100 grams but if that flour is too packed into the ‘cup’ the thing you’re baking can turn out wrong

  • @b.walker5955
    @b.walker5955 2 ปีที่แล้ว +2

    Remember recipes are based on WEIGHT. Dry cup are getting you close to the measure. NEVER SCOOP using your dry cup. Sift or lightly drop your flour/dry into the cup. Use a knife edge and level off. This is the CLOSEST you will find to weighted measure. Exception: when your recipe calls for packed brown sugar, pack it hard and firm. WHY is this important? Your cake, biscuit, bread etc will be far heavier, denser and dryer if you use too much flour. It DOES matter. You want light moist results and it is you tools and method that will get you there! KEEP FOLLOWING HER. She is a doll baby.

    Thank you for your cooking videos, Miss Pam.
    I am recovering my memory and daily life skills after many long surgeries to remove most of a life- threatening brain tumor.
    The length of the videos is just the right length for me to grasp the single nugget of information without losing it from other details.
    I like seeing items that I recognize from my kitchen.
    I also appreciate that you speak fairly slowly while facing the camera like Mr. Rogers did. (I am speaking of the children's television program, Mr. Rogers' Neighborhood.) Being able to watch your face while you speak helps me to understand your words more easily.
    I send your videos to my future daughter- in- law who really likes to prepare meals and desserts for my older son. Your videos help me have something from the present to talk about with her.
    Finally, I like watching your videos because you look like a former landlady from my university days. It is pleasant to be reminded of such a good lady.
    Best wishes to you.

    I’ve saved the hassle with most recipe-required measurements, esp since learning some measuring cups were a little to a lot off of the measurements marked on them (dry & liquids). If you want to get the best measurements possible, just pick up a quality set of kitchen scales. And yes, there are listings that show how many grams of water, milk, flour, etc weighs.
