Flourless Chocolate Muffins! Gluten/Dairy free (full recipe in description)

  • Welcome to my kitchen! Having dietary restrictions shouldn’t mean missing out. I have been gluten free for 15 years and dairy free for 7 years. I also avoid corn and yeast. We have four beautiful daughters who have each delt with a wide variety of food sensitivities over the years. In addition to no gluten and no dairy we have also avoided eggs, soy, cashews, sugar, carbs and meat. The main lesson I have learned is adaptability. I love cooking and preparing good food for my family and friends. Cooking is chemistry, my goal is to remove the mystery from chemistry!     Flourless Chocolate Muffins
    1 package allergen friendly chocolate chips (Nestle or Enjoy Life)
    ¾ cup non-dairy butter
    6 eggs separated
    ¼ tsp cream of tartar
    ¾ cup sugar
    2 Tablespoons cocoa powder
    1 tsp vanilla
    In a saucepan over low heat melt butter and chocolate chips, stirring constantly to prevent scorching. Set aside to cool. In the bowl of a stand mixer beat egg whites. Once the eggs are completely white add cream of tartar and continue mixing until soft peak stage. Set aside in new bowl so you can re-use the mixer bowl. To stand mixer bowl add egg yolks and ¾ cup sugar. Beat until soft yellow and fluffy. Add cocoa and vanilla and continue mixing. Pour in melted butter and chocolate mixture and combine. Add about 1/3 of the egg whites and mix, then add the rest of the egg whites and mix. Pour or scoop into lined muffin pan. Bake at 350 degrees for 25 minutes. Muffins will rise during baking and fall while cooling leaving a crispy chocolate top. Makes about 24 muffins.

    I tried to make a similar flourless chocolate cake. Put the batter in the oven then remembered the melted chocolate! We poured the chocolate on after we took the “cake” out and It ended up being a flat meringue with a thick ganache. 😂
