Almost perfect. But nasty aftertaste. And when I initially read the recipe, I questioned 1 Tablespoon of baking powder. Wasaayyyyyyy too much. Are you sure it isn’t a teaspoon? Going to try it tomorrow with 1 tsp. Other than that - the texture was perfect.

@@Heavens-Kitchen-MMY….ok… I re-made it with 1 tsp of baking powder. As you said it didn’t rise as high, however it rose high enough that when sliced it was akin to store bought thin sliced bread. I could still taste the baking powder but it wasn’t overpowering. Next I tried it with 1.5 tsp of baking powder. And it rose as high as it did with 1 Tbsp. But the taste was too strong… I went Rogue, and decreased the Baking Powder to 1/4 tsp, added 1/4 Baking Soda, added 1/2 Tbsp Apple Cider Vinegar - and omitted the salt altogether. Bingo. It rose as high as 1 Tbsp of Baking Powder and had absolutely no nasty taste to it. I sliced it and put some butter and sugar free honey on it and it was just like the white bread I used to eat like that as a kid. I haven’t tried toasting it yet because I am too full after eating the first two attempts. So …. That is how I made it perfect for me. I had the idea of using half baking powder and half baking soda with Apple Cider Vinegar to make it rise from a lady in Germany who has an awesome bun/Roll recipe using Bamboo fiber. Best Low carb bread I have ever had. But it takes time to make those and I wanted something quick as I can only bake on the weekends and usually run out of those rolls before the week is over. So it's not dry?
I made with store Almond flour, was eatable but dry and not tasty.

I re-made it with 1 tsp of baking powder. As you said it didn’t rise as high, however it rose high enough that when sliced it was akin to store bought thin sliced bread. I could still taste the baking powder but it wasn’t overpowering.
Next I tried it with 1.5 tsp of baking powder. And it rose as high as it did with 1 Tbsp. But the taste was too strong…
I went Rogue, and decreased the Baking Powder to 1/4 tsp, added 1/4 Baking Soda, added 1/2 Tbsp Apple Cider Vinegar - and omitted the salt altogether.
Bingo.
It rose as high as 1 Tbsp of Baking Powder and had absolutely no nasty taste to it. I sliced it and put some butter and sugar free honey on it and it was just like the white bread I used to eat like that as a kid.
I haven’t tried toasting it yet because I am too full after eating the first two attempts.
So …. That is how I made it perfect for me. I had the idea of using half baking powder and half baking soda with Apple Cider Vinegar to make it rise from a lady in Germany who has an awesome bun/Roll recipe using Bamboo fiber. Best Low carb bread I have ever had. But it takes time to make those and I wanted something quick as I can only bake on the weekends and usually run out of those rolls before the week is over.
