I had the same issue as you with grippy yarn being difficult to knit with. Someone left a comment on my podcast episode at the time suggesting to swap the left needle for a smaller size and it made the world of difference! It was just so much easier so maybe you could try that?
I love the pink and orange socks, but I agree that there's not enough contrast. The low contrast look is kinda cool tho, but if you really want the colors to pop, then you'd probably want to replace one of the colors. When you do the B/W test, make sure you are desaturating the image, rather than putting a B/W filter on it, these will give you a different results! What you are trying to do is only see the value in the colors, so desaturating will show that better. Both colors are super close in both value and chroma at the moment. If you decide to switch the colors, you can just pick a lower saturation or value version (or both) of either the pink/orange. Personally, I would choose a lighter and duller orangey to make that bright pink really shine :)

That orange and 0ink sock had little contrast. Pick other colors. Maybe a neon green with the pink?
