- Without any doubt, Homemade Candied Orange Peel is the little gem of deliciousness you can ever make at home. The peels taste like magnificent jellied candy with a jewel-translucent crisp texture. Not too sweet, because the essence of orange gives a perfect balance of natural and wonderful kick of citrus flavour. Great way to add to all kinds of desserts or baked goods, especially during an impressive flair to festive season like Christmas. The orange peels are boiled in a simple syrup, may takes a bit of time to make but the process is simple and worth it.
RECIPE
400g Orange Peels
1 kg Sugar
1 Litre Water
50g Light Corn Syrup
NOTE:
⚠️ The candying process vary from 6-10 days (depending on size, thickness and types of oranges)
⚠️ This recipe requires 400g peels, about 7 medium-large sized orange
UPDATE:
⚠️ If you have refractometer, the orange peels are done once reaching 72 brix**

@@rianajansevanrensburg2444it put a batch in a jar with lid, it became mouldy after a few weeks. Another batch without lid, it dried out and became very hard.
That would be very sad to all of that and then end up with hard peels @Jonathanliu

Honestly, I make these in an hour and a half and my finished product looks very similar to yours and mine are delicious. I use the slices in Old Fashions.

@@Maranna95 I remove the peels and slice them into 5mm wide strips. Put them in boiling water for about 5 minutes and then rinse with cold water. Repeat that and boil again. Two boils removes any bitterness. Make the sugar syrup (I use twice as much water as sugar and add a couple of ounces of orange juice) and add the peels. Cover losely and reduce until there is a nice thick syrup remaining. Typically takes about an hour. Once they are cooked and cooled I had some orange bitters. That's it! They are tender and delicious. I use them to make great Old Fashions.

Feel free to adjust the candying time based on your peels conditions! Sometimes I did it longer than estimated timeframe.

wonderful content! can I make this process with lemon and orange peels together, or they must be done separately?
if you're making small batch then you can cook them together its fine. But i personally separate them as they both done cooking at different time. Besides they results a different aroma and flavour!

this orange variety is so sturdy dang 👀 i tried candying leftover new year orange peels but i guess the variety of those oranges are alot softer coz my peels def became mush lmao

Hello. I am making candied orange peels for the second year using the Thomas Teffri-Chambelland recipe. Your video is very interesting to me because you are not adding sugar to the syrup each day, correct? Are you using the same syrup each day? Or are you adding more sugar each day? Do you know what Brix level your syrup is at the end of the process? Very interesting!
Yes, this recipe does not need to add sugar syrup each day. Just need to boil it for few minutes each day until the consistency thickens and reaches about 72 brix!
can it be eaten as is, just the peels?
Yes!
I wonder if l tasted it bitter when l boil it first time,may l repeat boil and wash them few times before adding sugar ?
try rinsing and soak the peels in the water twice (24 hrs in the fridge) before boiling them

I suspect this will be too bitter because the white part is bitter. I peel it very thin with almost no white partattached. Even Boiled it to to reduce bitterness

not necessary. I pour it warm and cool down before storing into the fridge/chiller
How does the flavoured change from the first day till it is translucent? Is it mainly become sweeter and sweeter? Hope to have stronger citrusy in flavour but less candied 😂
if the peels are properly candied it will not loose its flavour. The key is to slow boil, its all about patience

You may use honey, but i'd suggest to use corn syrup as it works more effectively.

Yes you can. However I have received some feedbacks that using honey / maple syrup still have the possibility of crystallisation

Mine didn’t maintain the curve 🥲 had to take a phone call and let it simmer for about 17 min in high heat in the first sugar syrup boil. Will it affect the flavor?

Did you ever try to just simmer the orange peels in the syrup until they reach the desired look and consistency? Or did you try it and it didn't work out?
Yes I have personally tried it but it does not work how I wanted. I find simmering and boil it everyday for 7-10 days give the best result and texture.
