Those plants grow here too, in the UK. It's called Oil Seed Rape, and you get a lot of oil from it, plus the oil is used in many ways here in the UK. I didn't know it originated in the East. Fascinating video. Thank you for showing us this process.

It was never for lack of oil, not even for a second. It has always been about heating the oil hot enough and long enough. Chinese food is not cut into very small pieces for convience. It is so it can actually be cooked by the time the nearly non-existant source of fire dies. China for a few thgousand years has not had sufficent wood, oil, coal or other for making cooking fires.
