- こんにちはLes sens cielです。今回は旬のフランボワーズがたくさん手に入ったので、フランボワーズをたっぷり使った本格的なケーキを作ってみました。フランボワーズの程よい酸味と、爽やかなヨーグルトムースの２層になっているので暑い夏でもぺろっと食べれます。ぜひお試しください！

直径16cm
フランボワーズピューレPurée de framboises
・フランボワーズ 500g framboise
・グラニュー糖 100g sucre
フランボワーズムースMousse de framboises
・フランボワーズピューレ 120g purée de framboises
・卵黄 3個/3 jaunes d'oeufs
・グラニュー糖 54g sucre
・粉ゼラチン 3g gélatine en poudre
・冷水 15g eau froide
・７割立て生クリーム35% 160g crème fouettée 35%
ヨーグルトムースMousse de yogourt
・無糖ヨーグルト 100g yogourt nature
・粉糖 30g sucre glace
・レモン汁 1/2 jus de citron
・粉ゼラチン 3.5g gélatine en poudre
・冷水 17.5g eau froide
・７割立て生クリーム35% 135g crème fouettée 35%
グラッサージュLe glaçage
・フランボワーズピューレ 120g purée de framboises
・水 27g eau
・グラニュー糖 108g sucre
・水飴 36g glucose
・粉ゼラチン 4g gélatine en poudre
・冷水 20g eau froide
ビスキュイ ジョコンドBiscuit joconde
・卵黄 5個/5 jaunes d'oeufs
・卵白 2個/2 blancs d'oeufs
・グラニュー糖 44g sucre
・薄力粉 32g farine
・無塩バター 32g beurre
・食用着色料 3〜4g coloration

I really like this person because they _scrap the bowls clean_ and that's just so great but rare in cooking videos!
If you watch more videos like this, most Japanese people scrap them squeaky clean which made it so satisfying!
