Looks like the Welsh cakes my mother made from a community cookbook. Those had some nutmeg mixed with the currants (the recipe suggested sultanas only as a substitute for the currants).
Keef do you remember a cake that had pastry on the bottom and then a layer of fruit cake mix then covered with more pastry then baked cut up and and sprinkled with sugar or icing sugar ? Gawd I haven’t had them in years lovely with a cup of tea 😘👍
Thank you, Keef, for making these! I love Welsh cakes. A very happy memory of my mother's kitchen. I'm going to make some for myself this weekend. Cheers!
I've never had caster sugar, but it's said to be not as fine as powdered, or confectionery, sugar. I've seen caster sugar in few recipes. Online sources claim a good substitute for caster sugar would be taking granulated sugar for a spin in a food processor.
Caster sugar is just more finely ground than granulated, but not as fine as icing (confectioners) sugar. We use it in baking because it dissolves easily.

Those look very nice. My first thought was they wanted a cup of tea to go with them, and maybe a bit of cheese. Hope I don't bring down the wrath of Wales for the thought! Could these be made with currants instead? Or would they lose their Welsh cake status?
Woo-hoo! Thankyouthankyouthankyou for the recipe and shout out! I didn't mind waiting, it's like having a surprise party. :D The roommate watched the video with me and wants me to make them. Now to dash out to the store to get sultanas. :) I get to do a victory lap when I post this on my FB page. Thank you again! Mrs. Keef -- you look fantabulous as usual!
My nan was Welsh she always made Welsh cakes . Loved them with a cup of coffee 😋
Mrs Keef Cooks- You wear the cheong saam 長衫 beautifully. Very nice griddle idea for tea, I might try it with rum soaked raisins?
