      I started eating plant based the end of April 2022 for my health. I lost my husband the previous May due to heart issues and seeing what he went through for too many years i needed to take care of myself. I had suffered from migraines and seasonal headaches for quite a few years. Besides losing 40 lbs to date I haven’t had headaches since starting. Just over the holidays I haven’t been as strict as i had been with my food choices and noticed that i have been a bit sluggish and 😅tired, even had a headache. Back to being strict and eating right. I have 3 adult children (one son with Fragile X Syndrome) and 8 grandchildren that I want to be here for. I love your videos and recipes and am thankful for the vegan community for so many wonderful ideas, tips, suggestions and delicious recipes. Thank you, Kathleen School

    I got headaches when I tried to go vegan. That happens to a small percentage of people I've heard. So I became vegetarian first and 5 years later went vegan. Had headaches for 2 weeks then okay. I've heard it's from withdrawal from food additives. Don't know if that's true. Tough it out. It's worth it! I'm vegan almost ten years now and my doctor is always amazed at my health. I'm over 70. But I did it for the animals.

      🙌🏾 Love this, thank you for sharing!! To help touch on the headaches... my understanding is; Some people will get headaches because they are eating healthier and not consuming the same amount of sugar. Especially when giving up dairy. Dairy and sugar have highly addictive properties so the headaches are caused from withdrawal.

    I've been vegan for almost 17 years now. Andrew's words are so true. Don't beat yourself up if you stray, and don't take it as being a failure. Just keep your purpose top of mind, and keep going.

    Funny how you pick little things up every video you watch. I have never pulled a garlic clove out with a knife like that! Very cool. I love the spice blend and sprinkling the garlic over the whole pan for the final bake. Thank you again! I predict big things for you sir!

    Bro, you perfectly described what has happened to me with mucus build up and can't breathe at night after eating bad. My wife and I just started the Daniel fast, and I'm going vegan afterward. I've had a fever and a bad headache the last few days. I can't believe my body detoxing like this makes me feel so bad, but it just confirms that I was eating death. I won't go back, for my health being pre-diabetic and my 5 children, the bad eating stops now. Please pray for my family as we transition to eating natural and healthy foods only!

    This sheet pan meal looks amazing. I've been eating ramen noodles for lunch at work every day for years, just because its so cheap and convenient. I KNOW its bad for me. I do. No one in my family would eat this sheet pan meal unfortunately, but I can easily make it and save for my work lunches. I really love your videos. The ASMR part puts me in the right frame of mind to listen to your advice following.

    I like the way these videos are done. Silently display how easy it is to prepare the meal, then speak on it. 🏆
    *I too grew up on West Indian
    (🇧🇧 Bajan) cooking, then fast food, then I went vegan by using vegan wheat sausage and intermittent fasting to lose 50 lbs in a year. Every pound returned when I stopped the intermittent fasting, so I resumed my love affair with the dreaded potato chip. Wise 👌🏿 🙄choice. Arthritis agony ensued.

    I was recently diagnosed with rheumatoid arthritis, I made this the other night for dinner and it was amazing! You have a bunch of meals I'm going to make, I'm not vegan but I'm adding vegan dinners 3/4 times a week, Im learning how to eat healthier and it's a good star with the meals you have.

    Cleaner and leaner is definitely healthier. I really don’t ever see myself becoming vegan but the vegetarian lifestyle is certainly agreeing with me. I ran a 5k yesterday (60 years old) and can say without a doubt that my diet change over the last couple of years is a huge contributing factor. The versatility in your recipes inspires me keep eating healthy. Who knows, the vegan lifestyle just might suit me one day. On another note, I was the one that asked about your butcher block counter top a few weeks ago. I love the sound the bowls and plates make when you slide them across the counters. Must be a wood guy thing😂.

    I just discovered your channel and have fallen in love- well in love with your philosophy and recipes- and I may, or may not, have a bit of an old lady crush on you.
    I have been moving steadily to more plant based meals over the past 3 years. My roommate and I have lost weight and feel better. I have Rhumatoid disease and as a result have recently lost the sight in one eye. I am very inspired to anchor my eating habits in even more anti inflammatory foods.     I made this for dinner tonight, and it was so, so good! I had never baked bok choy before, but it was so sweet with a bit of smoky char, rendering it delicious. I’m not a huge fan of kale, but I have now found its replacement.

    Hi Andrew, I found your videos a while ago and, wow, they are absolutely stunning. I'm definitely not plant based nor do I want to be, but I'd like to start replacing some of my meals for the week with plant based meals. I'm also Caribbean and a lot of meals is super high in sugar and starch. I'm going to make your rice and chickpea recipe this week then I'm going to try this one.

    So, so much info in this video that has nothing to do with a recipe! Jesus, sleep, nutrition and activity are the 4 pillars of my day. Prioritized in that order. SLEEP IS KEY to our existence. I too went Plant-Based for health reasons. In my late 40s I was finding that I had to pull myself out of bed each morning. The aches and pains... chalked it up to gym time and getting older. Two weeks into giving up JUST MEAT... that fatigue was gone, my energy was higher and I physically moved through the world so much easier. I WAS SOLD! Giving up animal products was a journey for this kid from a Mid-Michigan dairy farm. I also laugh when people say... I'm going Vegan / Plant-Based for 30 days. Then at the end they're like... Hell No! I'm like; but you just got through the worst part. The first 30 days! It did take a year for my body to fully "normalize" if there even is such a thing. EVERY... SINGLE... PART OF OUR BEING IS CONNECTED! "know your why!" YES, YES, YES... in all things not just being Vegan / Plant-Based. I could go on and on with the benefits i've experienced by changing what / how I eat. Stay amazing and PEEEEEEEEEEEAAAAAAACCCCCCCE! PS - You had me at sheet pan and bok choy!

However he likes all those processed faux meat dishes which I don’t want to eat. Now I’ve discovered you, I can confidently produce healthy home cooked meals without any of the processed stuff.     for anybody not ready to fully commit to being a vegetarian or vegan or just wanting to add more of those types of meals to their diet for whatever reason, instead of doing a whole day, they can also try doing 1 meal per day, 3/week, etc. figure out what works best for you and your lifestyle.

    Thanks for this Nard Dawg! I’m not a plant based guy but I do enjoy some vegan meals and I have to say this looks mouth wateringly good man. As I’m getting a bit older (I’m 33 now) I’m starting to become more and more conscious about what I put in my body. Essentially, we are what we eat and that meal is pure goodness so how could you not feel amazing after eating it. Will definitely be trying this one!

    You are so RIGHT about the domino effect that eating poorly can cause and ultimately send us on the healthcare hampster wheel.
    That positive feedback loop works in the same way to get better. You eat better so you sleep better, you feel better, you can make easier and better choices, you are better able to handle stress, you have more energy to maintain habits that continue this same loop. The nervous system and hormones balance out. It starts with food.

    I have the same experience, especially with sweets. I don't have much of a sweet tooth, but when I do get a craving every few months or so, I'll buy the cookies or ice cream or brownies or whatever, eat that for a few days. Then my gums get inflamed, I get congested and can't stop sneezing in the morning, my nose won't stop dripping, I gain weight, I start getting aches and pains and I just feel awful. Then I start looking for a dentist to remove my wisdom teeth, looking for pain meds, looking for cold medicine or allergy medicine, and stuffing tissue up my nose to stop the drip. This only happens after I eat sweets or lots of bready/wheat based things, and no other time.
    I'm at my best with no grains, no sugar, no dairy, and lots of plants.

    Thanks so much for your videos, they are very helpful and encouraging. One thing I’ve found on my journey is that it is even a bit of improvement in your diet can add to your underlying energy levels and that these levels increase over time. The first try can be very daunting especially if you’re coming from a place of low energy. So,I’m at the place now that I can feel very quickly after eating or drinking something as to whether it agrees with me. If it doesn’t, I stay away from that food from then on. By the way, I tried buying inexpensive conventional apples… they had no taste. It was bizarre. Definitely a huge difference from organics. 😊

    Thanks for sharing! Love the message at the end ✨✨✨ I’ve been able switch my breakfast and snacks to vegan/vegetarian. But I have a hard time with making the switch for lunch or dinner. In my mind I need one heavy meal per day (which translates to chicken or fish). But I’m working on changing my mindset 😅

    I understand your stating that Sweet Potatoes are not an anti-inflammatory. However, I would like to mention the benefits of having the sweet potato in the dish. It's orange, which means it's a carotenoid. The body process carotenoids into Vitamin A. Not to mention, Many red and orange foods have Lycopene. Lycopene is great for either destroying free radicals which contribute to inflammation and help cause cancer cell growth. Lycopene prevents the oxidative damage of DNA, lipids, and proteins. It also modulates immune function. Not to mention, the natural sugars are needed. The simple sugars and carbs provide fuel to the body which help it to run. Viewing these as bad are like viewing gasoline (or electricity) for a car as bad. Well, it needs those to run. Just try running a car without what fuels it. The reason these are bad for folks who consume animal products are because those particular fats and proteins from animals prohibit the body from processing the sugars properly to turn it into fuel. Instead it sits and circulates in the body because it can't really go anywhere. Now we have an insulin overload problem which only domino-effects into further problems such as diabetes, more inflammation and a host of other health problems. So go ahead...Enjoy those sweet potatoes! :-)
