When the skin is removed, it reveals the inner yellow part. When speaking casually, people sometimes just say "mung bean" and omit the split and polished. If people try this recipe, they need to make sure that they get the split and polished beans, as clearly shown in the video, and not whole one or ones that have just been split but the skins left on the halves.
