    This is my 19 year old daughter's favorite dish to order so I made it for her as she recovers from a major surgery. I think it looked, smelled and tasted even better than the restaurant's! I added matchstick cut carrots and used brown basmati rice. I'm so proud of myself for trying it.

    That fried rice does look so delicious and I love making it and has been eating it since I was in the Air Force and sent to Thailand where I tasted it for the first time. When growing up my mother only knew how to make plain rice and I tried eating it several ways and ended up throwing it out when her back was turned. One guy at the hotel where we was put up by the military until we was staying until they sent up an airplane to pick us up and he talked me into trying it and upon tasting it, I told the waiter to bring me a bowl of shrimp fried rice and was eating it since then.
    Dude must have eaten his share of the dish and leaving less for your children, but it is so delicious though. While watching you cook it I became so hungry and wanted to heat up the rice-a-roni and ground beef dish I cooked last night and could not eat any today due to religious reasons, but will devour tomorrow gladly and want more. Thanks for sharing this recipe with us all and I wish you all a Blessed new week.

    It's my son's favorite! I never use fish sauce. But I do like it with jumbo shrimp.
    Fried rice is the easiest when you have leftover rice. I always freeze leftover rice for fried rice. When I need it , just throw it in the microwave to thaw and you can fry with ham, bacon, hamburger meat, sausages. Spam... anything! You can even fry with ketchup to make Omurice.

    Hi Flo, I made this using grape tomatoes being that's what I had. And wow they added a great flavor. I just cut them in half long ways. They are on the sweet side with a bit of tart. So good. Please try making it with them next time. I'm sure Dude will agree.

    Hello Flo my name is Roland and I tried your pineapple chicken fried rice tonight and it was outstanding but I have to tell you I added a few tweaks to the recipe . I used fresh pineapple and I also used some Spam with the chicken breast I also added green and yellow peppers Plus mushrooms It got rave reviews from my family and of course I thought it was delicious thank you looking forward to trying some of your other recipes

    This was great! Had to rewatch for Dude's mad chopstick skills. (Decided at 70 I need to learn to use them. Do fine with the little trainer chopsticks but still go hungry when I try the real thing.)

    Awww...this is another one I just have to enjoy vicariously. Hubby only enjoys pineapple in pineapple upside down cake. If I made this, I'd have to eat it for days and days until finished, lol. And yup...he won't also eat Cilantro. Also...your Amazon link is missing an equivalent of the wok stirring utensil you use. Can you find one to recommend? Because if I'm going to shop at Amazon I'd like to benefit somebody I appreciate, like you! Dude, your red shirt totally goes with the holiday theme. And I think that this fall and into the holiday season we are all going to need good recipes like these to recreate our usual restaurant favs. Thank you Flo and Dude! Please keep making more simple and delicious recipes like this one. PS..I am so psyched to have found a Celiac-friendly diy version of oyster sauce so I can safely serve many great dishes to my daughter who has Celiac and adores Asian foods.

    Flo. You can actually cut the green onion to 1/4” to the roots. I do that and just push the roots into my garden, or if it winter, just in water in a ramekin. They grow!!! So if you want to use the white part you can.

    I know it wouldn't be the same flavor, but Worsteshire (sp?) is also a fermented fish sauce that many people already have in their home. It would also add an umami hit like the fish sauce does. Another umami bomb would be Vegimite/Marmite for those who already stock them and don't have fish sauce. None of these are the same, but they are similar.

    I use coconut animos, as my hubby is alergic to fish and bivalves. (I sub mushroom sauce for oyster sauce). It's not quite the same but it's more interesting than soy alone. :)

    Hi Flo can you tell me when you use a garlic press does it all go through the press or is there a skin like thing left in the garlic press because I was using a garlic press fo
    for the first time here a little while ago and a fear amount of garlic came through the press but there was a skin like thing left in the press and I had peeled the garlic so I just figured I'd done something wrong and I've avoided using the garlic press so I've turned to using minced garlic instead but if you could maybe tell me what I did wrong or if you can tell me how to use it correctly I would really
    appreciate it because I perfer to use fresh garlic I just think you get the garlic flavour better with fresh garlic so please help me

      It lasts a long time, but I buy it in small bottles. I’ve heard it doesn’t taste good indefinitely.

    Hi Flo is there something you could substitute for sesame oil as I can't use it as it gives me a migraine and what sort of oil do you use right at the start when you first put oil in the wok because I'd have to use olive oil but I've been told that you shouldn't use olive oil when your cooking chinese or any sort of Asian cooking so is that correct or would it be fine to use olive oil

    If any of your watchers don't have fish sauce but are into Mediterranean cooking you can always finally dice one or two anchovy fillets. That would make a decent substitute.

    Who can't get fish sauce these days? Unless your in a little town in the middle of the prairies? I have the same exact bottle you have. It adds a salty umami to stuff.

    Thanks for sharing!!! Looks Delish BUT, isn't there supposed to be a little yellow curry powder in the recipe? All the Pinnapple Fried rice I've ever ordered had a yellow tinge to it. Lastly i tried your Charsui method with the instant and my wife was very happy with it. Thanks a bunch!

    Yes you can sub by adding more soy sauce... BUT fish sauce always! Get some for your pantry 👍

    Flo and Dude, are there places in Canada that use curry powder in pineapple fried rice? All the restaurants I’ve frequented here in Florida and NYC put curry powder in their pineapple fried rice, not sure if it’s a regional variation that became popular down here?

      @Susan Anderson It’ll be better with the fish sauce but it’ll be just fine subbing in soy sauce.

    All I can say Flo is your recipes are out of this world. The fried rice took me back 55 years when I was in Korea. When possible we would go to the PX and buy a couple cans of SPAM and a 6 pack of beer and go to the local village. There was this huge wok such as yours. The lady cooking would take the spam and dice it so fine it was hard to taste in the fried rice. Only thing different was she would take a big cast iron skillet, so big it would not be usable on the average stove, and pour the egg in the pan and turn it around till the egg covered the pan. She took the rice out of wok and covered the rice with the egg. I ate something there that nearly killed, it is Kimshi, the real thing that comes in a jar that was burried in the ground. I had Kimshi and budwieser beer and I smelled so bad for several days. Never do that again.

    I got my work from Walmart. It's stainless steel but not quite as big.

    Since I never buy canned pineapple, I only get fresh. would this be 1 cup or 2 of chopped fresh pineapple ?
