Craving eggs for breakfast, but something different from the regular? breakfast egg BITES are an easy-to-make fun breakfast that is highly customizable! Use what you have, and what you like, and enjoy a quick fun breakfast.
Mini frittata in Muffin Pan.
Ingredients:
Egg Mixture:
5 eggs
1/8 cup grated Parmesan
1/4 tsp pepper
1/4 tsp salt
**ADD 1/2 CUP CREAM for fluffier egg bites (I omitted this since I used two kinds of cheese)
Fillings/toppings:
1 Tbsp Oil/Butter, plus for brushing muffin pan
1/2 cup sausages, cooked and cut up
1/2 cup spinach, chopped
1/2 cup cheddar cheese, grated
chilli flakes as needed
