Crispy Baked Chicken Wings

  • RECIPE: anitacooks.com... Hi Guys, today I’m making Crispy Chicken Wings in the Oven. There’s no mess of frying, cleaning or storing the leftover oil. You won’t miss deep fried wings because these baked wings are very crispy and taste almost fried. I’ll make crispy seasoned wings and crispy plain wings. You can put both in the oven at the same time and they’ll be ready together. The plain ones are perfect dipped in buffalo sauce, sweet and spicy sauce, really any sauce you’d like.
    I’ll show you the seasoned wings first. To a bowl, add salt, ground black pepper, onion powder, garlic powder, and paprika. Mix that to combine. To another small bowl, add baking powder and cornstarch. Whisk that together. This is what will make the chicken wings very crispy.
    Here are my chicken wings that have been separated into drumettes and wingettes or flats. These have been washed. Dry them really well with paper towels. You don’t want any water on them. Put the seasoning mix on the chicken. Rub it into the wings. Now put the baking powder and cornstarch into a little sieve and sprinkle over the wings. Put some of it on and turn the wings over, keep sprinkling and mixing. This way, all the wings will be evenly coated. Take a baking sheet and oil it lightly. Lining the tray with parchment paper is an even better method. It’ll guarantee that the wings won’t stick to the pan and cleanup is easier. Lay the wings on the tray leaving a little space between them. Now, chilling this in the refrigerator for a few hours will make the wings more dry and result in a crispier wing. But many of you won’t have the space to put this large sheet tray in your fridge. So, you can bake this right away and still get a crispy wing. I did it both ways, baked right away and refrigerating for a few hours. Both were crispy. Heat your oven to 425 degrees F or 220 C. Bake the wings for 20 to 25 minutes until they are golden. Turn over and cook for another 20 minutes until crispy. Perfectly seasoned, crispy skin, you don’t even need a sauce with these but if you really want to serve with ranch or creamy blue cheese dressing.
    For the plain wings, to a bowl, add cornstarch, baking powder and salt. That’s it, you’re thinking this is way too simple but you don’t need anything else to make crispy wings. I’ve got the washed separated wings in a bowl. They’ve been dried well. Again, put the cornstarch mix in a small sieve. Sprinkle all over, turn the wings and keep sprinkling to cover evenly. I put them on a parchment lined baking sheet and baked them in the same temperature oven as the seasoned wings. Turn over after 20 to 25 minutes and cook for another 20 minutes until they are crispy. You won’t believe these simple wings seasoned with just salt can taste this good. Dip them into any sauce or quickly coat them in a buffalo sauce and serve right away. Don’t coat them in any thick sauce because you’ll lose the crispiness. Now you know how to make 2 kinds of wings very easily with little work. Give these a try and leave your comments below.     Ms. Anita, very nice recipe, btw a tip I learned from a chef is putting the wings on a wire rack on the cookie sheet will crisp the wings up even better with no wet soggy spots on the wings, I hope that helps someone if needed, everyone have a great super bowl weekend & be safe

      Hi Steve, I find that the rack gets really messy and hard to clean so I prefer to use parchment. Maybe non-stick spray would help 😁

    I always knew baking powder makes a crispy baked chicken wing... Never knew to combine baking powder with cornstarch... I'm going to do this method all the time since I make a lot of baked chicken... You're my idol Anita❤❤❤

    There's no measurements for ingredients. Other than that, I like the video. I agree with you on the parchment paper. Cooking on the cooling wrack probably does produce a crispy product, but like you said in a previous reply, The cooling wrack is hard to clean!😊

    I followed your guide but it was disgusting i don’t handle baking powder at the best of times i ate as i was hungry and treated it as fuel and no more but i’ll have to find a better more natural way other than baking powder, we have a negative view here in little england, of cuisine in the states but i have had the best beef when i was there so put my inexperienced views to one side but if the average American thinks this baking powder recipient is cool i’d have to readjust some of those naive judgments but i’m grateful for the learning curve. Thanks Anita your other dishes so far wonderful, those that i’ve tried.

      Too much baking powder can indeed make the texture weird!! I’ve made this mistake, it becomes almost slimy? Not with wings, but trying to even pan fry a simple beef/broccoli or chicken/broccoli Chinese style, using too much made it sticky/gooey for sure. It took a few more times of making it & perfecting timing on cornstarch slurries that I finally understand why…& I’m a biochem major 😂lmao. Try again or switch the cornstarch - that can also cause weird gumminess as well if the “near exact” amount isn’t used! Best wishes 😊

      Hi, if you’re in the UK, cornflour is the same as cornstarch in the USA.
