    Welcome to another video. This recipe went viral on Instagram a few weeks ago, so we filmed it again, this time with a different camera for you to enjoy here. Jason and I had a chance to visit a partner of ours in San Diego, a bakery called Hinar. They just started testing out a matcha cheesecake, and it's really, really delicious!
    So if you like simple recipes that combine rich flavors with matcha in a cheesecake texture, then get ready to enjoy this unique and irresistible dessert! I'll see you in the next video!

    p.s. I did not write the recipe down below, but I did follow it and it came out tasting like the one from the video... or so i'm told! Let me know how yours turns out, we should start finding a way to bring these creations to life together!
    Ingredients
    Cake:
    - 3 eggs
    - 100g all-purpose flour
    - 80g sugar
    - 10g matcha powder
    - 7g baking powder
    Mousse:
    - 16g gelatin sheets
    - 250g milk
    - 140g sugar
    - 350g whipping cream
    - 200g cream cheese
    - 16g matcha powder
    Instructions:
    Cake:
    1. Preheat oven to 180°C (356°F) and grease a 40x20cm rectangular pan.
    2. Beat egg whites until stiff peaks form.
    3. Gently fold in egg yolks.
    4. Add sugar and mix.
    5. Mix in flour, matcha powder, and baking powder.
    6. Pour batter into the greased pan, spread evenly, and bake for about 10 minutes.
    7. Once baked, remove the cake from the pan and set aside.
    Mousse Preparation:
    1. Soak gelatin sheets in cold water until softened, then squeeze out excess water and dissolve in microwaved milk.
    2. Mix the warm gelatin-milk mixture into softened cream cheese, add sugar, and mix until smooth.
    3. Whip the cream until it reaches a soft texture.
    4. Fold part of the gelatin-cheese mixture into the whipped cream, then add the rest and mix to form the mousse base.
    Creating the Gradient:
    1. Prepare five small bowls.
    2. In each bowl, dissolve matcha powder in a little water.
    3. Gradually add portions of mousse into each bowl, starting with 1g matcha in the first bowl and increasing the matcha amount for each subsequent bowl.
    4. Pour the mousse pastes into a mold, starting with the plain mousse and progressing to the darkest matcha mousse, pouring each carefully in the center. Adjust thickness by adding milk if needed.
    Final Steps:
    1. Chill the mousse in the refrigerator for at least four hours.
    2. Warm the sides of the mold for easy removal using a hairdryer or blowtorch.
    3. Once unmolded, the gradient matcha mousse cake is ready to serve.
    4. Store any leftovers in the fridge to maintain texture.
