I just made it today. It was sooo delicious & stretchy. Exactly what i want. Here are some changes that I’ve made. - I steamed it cos I feel like the microwave is a bit hard to control & steamed for 10’ or some around there. - I used potato starch cos I ran out of cornstarch. - I misread the butter amount & pretty sure added like 30- 40’ gram into the dough :))). - Didn’t have enough starch during the shaping so I just used tad more butter & its very elastic & quite difficult to mold it so I suggest you guys use saran wrap so it’s easier to transfer & store individually in the fridge. - I used whipped cream with some mascarpone & ate one after giving 5-7’ in the fridge & it was so delicious. Not sure abt the rest of the batch are goin to be harder as I used a bit more butter than the recipe called for but for now it’s a 10/10. Def recommend.

1) Always use whole milk; 2) Microwave ovens are a complete disaster for this recipe, and it's probably the root of your problems. Use a pan on low heat instead, until you get a soft and elastic dough. I hope this helps.

I was about to say, so I would love to try mochi one day, but when I saw the butter (which was a European invention) I was thinking this can't be a traditional Japanese recipe (either that or mochi can't be a very old traditional food). But then I saw your comment and I guess this must be a modern improvised/updated version.

I’ve seen a lot of people make original mochi at home by mixing cooked glutinous rice in a stand mixer which replicates the pounding of the rice which is how it’s done originally. You can also just pound it with a rolling pin if you don’t have a stand mixer though 😊😊

If your are struggling I recommend using a sauce pan to actually cook the mixture works better then microwave.

I dunno if it’s the flour I’m using or it’s not suited for a taro filling but this is OK at best. Seeing as you’re using it for sweet filling, I’m guessing it’s the later. I hope it’ll be a different story when I try out an egg custard filling

It is better to use sweet rice flour, otherwise, the dough will be hard when mochi gets cold.
