Buns ani Phov | Mangalore Buns & Phov | Banana Wheat Poori with Poha | Authentic Konkani Breakfast

  • Very Authentic Konkani Breakfast Recipe called - "Buns". It is very famous as "Mangalore Buns". It is made with Ripe Bananas. It can be served with potato curry or chutney or Very authentic dish called - "Phov" (made with Poha). Recipe for both "Buns" and "Phov" is as shared below. Buns can be made with either Maida or Wheat flour. Here we have done with Wheat flour which is more healthier than Maida. It is better we avoid Maida for better health.
    Ingredients for Buns:
    ---------------------
    2 Ripe Bananas
    1/4 cup curds
    2 pinch baking soda
    2 table spoon maida
    1 table spoon ghee
    1/2 cup grated Jaggery
    Wheat flour (as required to make the dough with proper consistancy)
    Salt as per taste
    Method of making Buns:
    ------------------------
    Mash the bananas and add 1/4 cup curds, 2 pinch baking soda, 1/2 cup grated jaggery, 2 table spoon maida, 1 table spoon ghee, salt as per taste and mix well.
    Now add wheat flour little by little and knead the dough to bring it to a proper consistancy. Cover the dough and rest it for 8 hours overnight.
    After 8 hours, Knead the dough for 2 minutes. If it is very soft then add some more wheat flour and knead it, to bring it to proper consistancy.
    Now make medium sized balls and roll them into thick and round buns.
    Heat oil in a pan, once the oil is hot, deep fry these buns until they change colour and is properly cooked on both sides. Dont burn them. Now the buns are ready to be served with any curry or chutney or with authentic side dish called "Phov" made with Poha/flattened rice.
    Ingredients for Phov:
    ----------------------
    1/2 cup grated coconut
    1/2 tea spoon red chilli
    1/2 tea spoon kashaya powder or poha powder

    Salt as per taste
    2 tea spoon sugar
    Poha/Flattened rice (as required to mix)
    Method of making Phov:
    ----------------------
    Mix grated coconut, red chilli powder, kashaya powder or poha powder, salt, sugar into proper masala with your hands.
    Now add the poha/flattened rice as much required to be added to this masala and mix it well with soft hands. Phov is ready to be served with hot buns.
