You can almost always find precooked cactus in a jar at any grocery store that has a Hispanic food section. You will need to rinse those out well as they can be very salty, at least to my taste. You will need to go a a Mexican store to find the fresh cactus. Sometimes they are available pre-cut and ready to cook and sometimes not.
