There's one that you missed but is almost impossible to get to do, princess in a settlement. She rides a horse and your assassin throws a knife to kill her on the horse.
You are missing a lot of animations where he gets away or is killed. The spy animations are also cool. Ps. I personally love the animations. A lot of dedication and extra detail was put into Mediaval Total War II. Wish they did more games like it.
