Corn pudding has been one of my family’s new favorites! All you need is 1 box of jiffy corn muffin mix, 1 can corn drained, I can of creamed corn, 1 cup of sour cream, 1 stick of melted butter. Mix all of that in a baking dish and bake at 350 for 45 mins to an hour! It’s PERFECT!
When making any type of sandwich or burger I love to air fry baby potatoes for a twist on fries. Quarter baby potatoes, toss in a small amount of oil and spices, then air fry at 375°F for about 12 minutes. Crispy on the outside, fluffy on the inside.

The boy eats pre breakfast, breakfast, snack, pre lunch, lunch, pre dinner, dinner, and an after dinner. I am at a loss where he is putting it all. My husband eats hearty foods but this is killing my grocery budget. I have a family of 6 yet I am buying for a family of 8 to 10. I like to provide healthy fillers but its expensive. Girl I do not know what to do with a growing boy.

My sister-in-law and I did potato casserole on the grill. 9x13 foil pan, three cans of sliced canned potatoes, diced onion, slices of COLD butter and shredded cheddar cheese. Layer like lasagna and end with a cheese layer, cover with foil and throw on grill😋😋😋
Hi again. Try pilafi ( Greek for rice). Just use chicken broth instead of water. When rice is just about done, melt half a stick of butter in a saucepan. Cook it until the butter is lightly browned. Pour the butter over the rice and let it sit, covered for 5 minutes. Add the juice of half a lemon, stir and serve. 😋
Our favorite side dish is cauliflower salad. You need : Cauliflower, cut into small pieces (use as much as your family will eat. 1/4 cup diced sweet onion 1/2 cup green olives with pimento, cut up Pepper to taste Mayonnaise add enough to moisten salad. You want it creamy. The olives have enough salt without adding extra. Mix together, put in refrigerator till chilled. Enjoy!!

This is so simple but my family loves it! Garlic green beans- 1 can of no salt added green beans drained, 1 tablespoon of butter, 1 teaspoon of garlic salt (or more if you want). Add all to a microwave safe bowl and microwave for 60-90 seconds. Stir and serve. My 14 year old picky son will eat the entire bowl!
I can't wait to try the beans and the corn! My daughter-in-law taught me to add chicken bouillon and minced garlic along with the water when you cook white rice. Stir and cover. Don't remove the lid till the rice is done and it comes out perfect!!! Not sticky at all. And the flavor is AMAZING!!! If you want to try it, I'll get the measurements for you. Thank you so much! P.S. I don't care if you give Jimmy crack corn. Hahaha. Sorry. Couldn't pass that up. 😀
I was glad that he mentioned that his palette requires a heavy flavor, I am the same way- I just simply prefer things extra flavorful. One of our two cats (the older one) also taps our legs at the dinner table as if she is tapping someone gently on the shoulder. It’s so adorable, she loves ham the best. I want to try all the side dishes but I’m most excited about the corn 🌽

I’ve made a corn salad also with corn, Mayo, red onion, halved cherry tomatoes, bell pepper, and shredded cheddar. right before serving stir in some (lightly) crushed chili cheese Fritos 😍 you can make the corn mixture earlier in the day or the day before and just add the chips at the end

We love to eat a Lentil Salad to grilled meat and fish. You cook the Lentils of your choice (not the red ones) until almost soft but a little shy of done. Do not cook them until they are mushy. Still hot, put them into a vinaigrette made with lots of Dijon mustard and a sharp vinegar. Red onion and lots of flat leaf parsley. Season really well and let cool down to room temp. This Salad is good for days and makes a great side or full meal with some cheese or egg.
I’m not a fan of eating my vegetables but I love sautéing veggies then adding a spoonful of Boursin cheese. I love it with mushrooms, spinach, zucchini, or squash. I’ve even mixed all those veggies together and it’s still delicious.
Nope, just sauté the veggies in olive oil or butter with salt and pepper. Then I turn the heat off or low and add the cheese. Stir until melted 🤤 if you use some cream and add more cheese it makes a sauce to pour over chicken.
An old time Southern side dish is tomato pudding. Several cafeterias in the South still have this side dish on their buffet. Here in Washington state most people have not heard of it. The name is misleading since it doesn’t taste like pudding. It takes over an hour to cook in the oven. I love it.
Hey Mandy, I steam sliced carrots. Fry sliced onions in a skillet, add in the steamed carrots and add a few swirls of honey. Cook until slightly caramelized. Xx

Mashed potatoes and rice can only go so far. So excited to try the Crack Corn recipe! Any suggestion on what to add so it's not so spicy...my kids are not so keen on spicy dishes.
My hubby loves rice, me not so much. Chop an onion, white or red or any type really. Cook in olive oil and butter for a few minutes. Add a packet of Lipton soup mix, garlic powder and 2 cups of rice. Cook for a minute or two until everything is mixed together well. Add 4 cups of vegetable broth or chicken or beef. Stir everything. Wait for it to come to a boil. Stir well. Cover the pot and reduce the heat. Cook for about 12 minutes. Stir with a fork to fluff the rice. My hubby loves it. Maybe add more than a little garlic and some hot sauce for Steven. But try it my way first. I hope you give it a try and enjoy it
Hi, Mandy. I like to make Broccoli Salad. It probably has another name but thats what i call it! I use broccoli florets...no stalks...shredded cheese and crumbled bacon. I toss it all with sweet vidalia onion dressing. It is really good. I never measure any of it i just add until it looks and tastes the way we like it. It is super easy!
My papa who has passed since 1985 would always chop up zucchini, potatoes and garlic to him the more the better he was Italian and after that was done he would scramble a couple of eggs in the same pan with the veggies..man it was amazing my mom still makes it to this day even last week good memories

Mandy, here is something I do to jazz up plain rice. Instead of water, use an equal amount of chicken broth, beef broth, whatever flavor you're going for. At the last few minutes of cooking, toss in some frozen baby peas. Something you can do with leftover plain white rice, is add a few things & eat it for breakfast. You can add a little milk to heat it up, & along with that some brown sugar, cinnamon & raisins. It is so tasty, especially on a cold winter day!
Couscous is a fast favorite side & it can be flavored so many ways. A go to is sundried tomato, lemon juice, chopped artichoke hearts & capers if you like. Dried fruit & sunflower or pumpkin seeds, butter & garlic etc.
Our family loves what we call Garlic potatoes. I slice a pile of potatoes and let them soak in cold water for a bit. While they soak, we cover a 9x12 pan with thick foil and melt one stick of butter in microwave. Then we assemble. One layer of potatoes, sprinkle seasoning salt, drizzle the butter and add pieces off minced garlic all over the layer. We keep layering until we can’t add anymore to the pan. Cover with foil and put in a 375 -400 degree F oven for about an hour or hour and a half depending on temp and how many layers. We have also cooked this on the gas barbecue. This is my daughter’s favourite ( I’m Canadian). We especially love to fry the leftovers ithe next night in cast iron pan. Take care
Love the ranch rice idea! My rice trick is to add chicken bouillon to my water and add sliced onion and corn on top. The steam softens the onions and corn and It's so tasty🤤

Cold Green Bean Salad Make canned green beans better. 1 can cut green beans(drain) (Not French style) 1 sliced onion 1 can whole peeled tomatoes, (with its juices) slightly chopped. Mix all together and chill. Salt and pepper to taste.
We have a corn side dish that our family loves. Grilled or stir fried corn with a little char on it is the best, but it works well with canned corn or frozen corn too! Corn, cilantro, jalapeño, green onion, feta, and a sauce made with mayo/lime juice/salt. It’s delicious and comes together so quickly! (ETA: We eat it as a side served warm or as a dip in chips served cold.)
Mix the rice with the corn salad. . Awesome! I love to make a Greek salad. Slice cucumbers thinly, add Roma tomatoes cut into bite sized pieces, add vinegrette (olive oil, vinegar, salt, pepper, garlic, diced onions) add one 8 oz. container feta cheese and and 1/2 jar sliced Kalamata olives. Serve at room temperature, or if you make it the day before or in the morning, put in refrigerator until about 30 minutes before dinner. We like to eat this with fresh french bread, or with warm pita bread.
We rinse 2 cans of diced new potatoes by Great Value from Walmart. Melt half stick of butter in a skillet. Dump the two cans and stir for 3 minutes. Add 1 to 3 tsps of old bay seasoning for your liking. My family loves this side dish. The flavor is amazing. Cost is 50 cents a can.
I love the corn salad. For some quick and easy things I do for side dishes is I will take s can of corn drained well add a little milk and some American cheese let it melt down and mix it well together simple but delicious. I also finely mince onion and sauté it with butter and brown sugar and then add a can of drained petite green peas and let them cook for a little while in that brown sugar syrup. So delicious.
Hi Mandy! As a side I do rice with benefits LoL. I add a cup of mixed frozen veggies to my rice as it is cooking, it makes the rice "jeweled" and colourful and it saves cooking a veg as well. Serve it with your meat and gravy or a knob of butter melted over it, salt and pepper to taste - or your ranch seasoning. We don't have ranch seasoning or dressing in my country.
I shush up my white rice 2 ways: the first is putting a whole green pepper in the center as it cooks, the taste is wonderful;the 2nd is using baking grease and once done I take bacon and crumble it along with super fine chopped parsley and done…..I’m definitely trying the corn one soon….
One of my favourite sides is roasted veggies! Potatoes, carrots, peppers, onions , mushrooms, fennel (zucchini is not recommended). Cut everything in roughly the same size. Put everything on a cookie sheet. Drizzle with olive oil, be generous, and spices of choice, we like Italian or taco seasoning. Mix everything with your hands. Roast in the oven for 25 to 45 minutes at 400F. Cooking time depends on size of veggies. Mix Left over veggies and the oil mix with couscous for lunch the next day. Add chicken and it’s perfect. Love taking it to pot lucks always a big hit!
Hi Mandy. They look good except for the raw onion. I would just leave that out. Love the ranch idea. I have not added it to rice, but I have put it in mashed potatoes and in pasta salad (the powdered kind for both). They were both really good. Try it.
My father-in-law likes to quarter a couple vidalia onions, put in a microwave safe bowl with butter and Lawry's seasoning salt and cover with cling wrap. Microwave for 8-10 minutes or until mostly soft. I didn't think I would like that, but they are really good as a side dish.
We make an orzo salad with green onion slices, chopped ripe olives, chopped orange or yellow peppers, sliced and quartered English cucumbers, and quartered cherry tomatoes. The dressing is made with olive oil, lemon juice, honey, salt and pepper. Red pepper flakes can also be added.

I make veggies more than real side dishes, but that crack corn sounds amazing! Loved this. I guess if you count veggie dishes, I make Greek style green beans with diced tomatoes and garlic, recipe is on side of green bean can, but it's 30 seconds, lol. I also make rutabagas and parsnips mash with smoked pork chops, again dead simple. Squash casserole, but everybody in the South knows that. Horseradish and lemon roasted new potatoes. Roasted beets and feta salad with vinaigrette, sauteed spinach with garlic and lemon, Asian corn and rice, etc. Nothing fancy or long these days because it's just me and I get demotivated.
P.s. my absolute favorite, definitely southern, way to eat regular plain white rice, is with tomato gravy. I am not talking about pasta sauce that Italians know as gravy, I am talking about real gravy made with tomatoes. My mother made it growing up as a side for things like pork chops and I love it.
One of our favorite potato sides is hash brown casserole. I always make extra broccoli & cheese soup so I can use that in my hash brown casserole instead of the typical cream soup. I add in my sour cream and some bacon and bake. It has a lil’ veggies in it and lotsa cheese and it’s scrumptious. 🎉
Fondant potatoes- I cook these a lot with chicken. Quick twice baked potatoes- microwave the potatoes then scoop out and make however you want… then bake on 450 until hot! Roasted vegetables like acorn squash, sweet potatoes, broccoli, carrots, large chunks of onion, radishes halved.. these are weekly sides! I typically do garlic powder, onion powder, smoked paprika, fresh grated Parmesan salt and pepper. The radish I just roast with oil salt and pepper until caramelized then toss in butter and fresh herbs.
Side dish: Into an oven safe dish 9x13 works good but use what you have. Slice 4 russet or Idaho potatoes and a large onion into thin slices. I use a mandolin. Stir or leave in layer. It’s your kitchen. Add Italian salad dressing, about half a small bottle, but if you feel like more this is a no rules recipe so you do what you like. Bake at 425 until potatoes are fork tender, usually around 30 minutes. Add ins for those who like it: bacon crumbles, cheese, or bits of ham.
We add chicken base to the water when we cook rice. It helps add some depth to it. We also will heat oil and add garlic for 30seconds. Add rice and water and bam, you got garlic rice.
Corn is my favorite food, so anything with corn gets my attention. My brother, mother, and I made candied jalapeños and I think they would be so good in the corn recipe. As always, thanks for sharing.
I make a pot of white rice using the seasoning packet from beef or chicken ramen noodles, add some corn and broccoli florets and it's a perfect side dish 😊💜
One of my favs is “twice baked” potato’s. Cook your potato’s like you normally would for mashed potato’s, once you are done and going to mash them mix them with butter, milk, diced onion, salt, pepper, and sour cream (Measure with your heart 💜). Make them slightly runnier than usual. Put them in a small baking dish and cover with cheese and bacon! Put it in the oven until it’s all ooey gooey 😋 I also love bacon cheddar ranch red/yellow potato’s (season with ranch powder, garlic powder, onion powder, and pepper… bake until fork tender then cover with cheese and bacon and bake again until melted) Air fryer veggies always seasoned with ranch powder, pepper, garlic powder, and onion powder. Honestly nothing beats a box of Mac and cheese though 🤣🥰

One of my favs is leftover mashed potatoes become mashed potato bake. Think loaded baked potato using mashed potatoes, toppings mixed in topped with cheese and bake. Leftover that don't feel like leftovers
Mandy, growing up my Mom always made cream n' carrots, we called them white carrots. Later in life. We learned it was sliced cooked carrots and seasoned White Gravy. White gravy was thick and held the carrots well. She'd sprinkle little Dill on top.
I make a Three bean salad with a can of green beans, wax beans, and dark red kidney beans and onion, Italian salad dressing, salt and pepper - all to taste. It's really good.
Three bean salad with a twist, can of green beans, kidneys beans, chick peas and can of sweet corn or Mexican can, drain all the cans, 1teaspoon of salt, 2teaspoons pepper, 2 table spoons of parsley or 1 tablespoon of dried dill weed, mix well then pour about 1/4 cup of Italian dressing over beans mix well taste if you make sure it's seasoned to your taste, cover chili until ready to serve it will last about three days in the fridge
I do a simple five minute rice. Instead of water I use chicken stock and add frozen veggie mix and make the rice exactly how it calls for. It’s super simple but adds more flavour and veggies on an otherwise boring side dish.
Just a disclaimer, my 'family' is my partner and our dogs, but I love to make the green bean salad from yotam ottolenghi's plenty cookbook. It's green beans, snap peas, mustard seeds, tarragon, red onion, red chile, lemon zest, and chard leaves. It's fresh and yummy and really really easy bc there's no cooking

Hay Mandy I made that crack corn dip for the 4th of July and it was a big hit I also just used ranch dressing. When I make white rice I sometimes use beef stock or chicken stock in place of water and we love it.
First let me say I enjoy watching you and your family. I also have taken almost every receipt I have tried and adjusted it to work for my family. When you started talking about the rice I remember a side my mother-in-law would throw together. It was the first time I ever had a cold rice salad and yum yum it was good. For some goofy reason I have not made it in years. Thanks for the memory wake up. Cook 1 c rice till done and rinse all the starch out with cold water. After it is drained add 2 tbs powder chicken bouillon, add 1/2 c each, onion, pepper (your choice), tomatoes, and cucumber all diced, salt & pepper and a dash or two of red pepper flakes. Stir and chill one hour. She used what ever was left in the veggie bin at the end of the week. Just adjust amounts and ingredients to your family's taste. Enjoy
I'll be making the corn and the white bean ones, thank you Mandy. How about trying a firm favourite of ours. Its called Peach Walnut Cream salad. Start with any salad leaves, I use halved canned peaches sitting in the middle, topped with whipped cream and a whole walnut or pecan. You can add chopped nuts to the salad with a little dressing on the leaves, or add anything you like but the sweetness of the peaches with the cream are just lovely.
Without tasting anything, I think the Crack Corn Salad would be my favorite also. I make Paula Deen’s Corn Salad and it is so good. We love it with tortilla chips.
Another side dish I learned from a Cajun in Louisiana is Cajun Potatoes - boil baby red potatoes (or quartered red potatoes) with a capful of Louisiana crawfish, shrimp and crab boil seasoning(I always buy the liquid one.) And a little salt. Drain. Mash lightly with fork or a potato masher, not to much just like really lumpy mashed potatoes. Add cheddar cheese, crumbled bacon and butter. Put in casserole dish and bake until the cheese is melted. Yummy. . . It will be spicy with one capful of the seasoning, but bearable, use less if you don't like spicy.

I made the crack corn and it is really delicious. Didn’t have jalapeño relish but did have sweet pickle relish, so I added some Sriracha sauce to it and it worked just fine. That is, I had Sriracha sauce to the sweet pickle relish before I added it to the crack corn.
This is a favorite in our house and you might like it because it has Jalapeno in it 😏 Confetti Bean Salsa 1 Green Bell Pepper, chopped 1 Red Bell Pepper, chopped 1 Jalapeno pepper, chopped 4 Green Onions, sliced 1 Tbsp. Cilantro, snipped fresh 2 Cloves of Garlic, pressed or minced 1 can (15 oz.) White Beans, drained 1/2 cup Corn, frozen Dressing: 1/3 cup Olive Oil 1/3 cup Lemon Juice 1/4 tsp. Sea Salt 1/4 tsp. Oregano 1/4 tsp. Garlic Powder 1/4 tsp. Thyme 1/4 tsp. Basil
Place all ingredients in bowl (expect dressing). Whisk all dressing ingredients together & pour over bean mixture; mix gently. Refrigerate 1-2 hours to allow flavors to blend. Serve with Corn chip scoops or tortilla chips.

My favorite easy side is lemon orzo. I boil orzo, drain and toss with lots of lemon zest, evoo, s/p, parmesan, and fresh parsley.

1/4 cup diced sweet onion
1/2 cup green olives with pimento, cut up
Pepper to taste
Mayonnaise add enough to moisten salad. You want it creamy.
The olives have enough salt without adding extra.
Mix together, put in refrigerator till chilled.
Enjoy!!

This is so simple but my family loves it! Garlic green beans- 1 can of no salt added green beans drained, 1 tablespoon of butter, 1 teaspoon of garlic salt (or more if you want). Add all to a microwave safe bowl and microwave for 60-90 seconds. Stir and serve. My 14 year old picky son will eat the entire bowl!
I can't wait to try the beans and the corn! My daughter-in-law taught me to add chicken bouillon and minced garlic along with the water when you cook white rice. Stir and cover. Don't remove the lid till the rice is done and it comes out perfect!!! Not sticky at all. And the flavor is AMAZING!!! If you want to try it, I'll get the measurements for you. Thank you so much!

I was glad that he mentioned that his palette requires a heavy flavor, I am the same way- I just simply prefer things extra flavorful. One of our two cats (the older one) also taps our legs at the dinner table as if she is tapping someone gently on the shoulder. It’s so adorable, she loves ham the best. I want to try all the side dishes but I’m most excited about the corn 🌽

Hi Mandy!! I do make rice with "seasoning" in my rice cooker.... It works so very well! I also substitute broth for water or I add onion soup mix to my water! I love watching you!! Take care! 🙏♥️
I’ve made a corn salad also with corn, Mayo, red onion, halved cherry tomatoes, bell pepper, and shredded cheddar. right before serving stir in some (lightly) crushed chili cheese Fritos 😍 you can make the corn mixture earlier in the day or the day before and just add the chips at the end

Another great thing to do with plain rice is to substitute chicken or beef broth for the water snd add 2 tbsp of butter also.

We love to eat a Lentil Salad to grilled meat and fish. You cook the Lentils of your choice (not the red ones) until almost soft but a little shy of done. Do not cook them until they are mushy. Still hot, put them into a vinaigrette made with lots of Dijon mustard and a sharp vinegar. Red onion and lots of flat leaf parsley. Season really well and let cool down to room temp. This Salad is good for days and makes a great side or full meal with some cheese or egg.
I’m not a fan of eating my vegetables but I love sautéing veggies then adding a spoonful of Boursin cheese. I love it with mushrooms, spinach, zucchini, or squash. I’ve even mixed all those veggies together and it’s still delicious.

Nope, just sauté the veggies in olive oil or butter with salt and pepper. Then I turn the heat off or low and add the cheese. Stir until melted 🤤 if you use some cream and add more cheese it makes a sauce to pour over chicken.

An old time Southern side dish is tomato pudding. Several cafeterias in the South still have this side dish on their buffet. Here in Washington state most people have not heard of it. The name is misleading since it doesn’t taste like pudding. It takes over an hour to cook in the oven. I love it.
Hey Mandy, I steam sliced carrots. Fry sliced onions in a skillet, add in the steamed carrots and add a few swirls of honey. Cook until slightly caramelized. Xx
You just keep hitting these videos out of the park, Mandy...seriously ⚾ I love opening up TH-cam and seeing that you've posted another video. I have been in such a "sides" rut, lately. Mashed potatoes and rice can only go so far. So excited to try the Crack Corn recipe! Any suggestion on what to add so it's not so spicy...my kids are not so keen on spicy dishes.
Use just a dash of cayenne. Much easier to control the spice.

My hubby loves rice, me not so much. Chop an onion, white or red or any type really. Cook in olive oil and butter for a few minutes. Add a packet of Lipton soup mix, garlic powder and 2 cups of rice. Cook for a minute or two until everything is mixed together well. Add 4 cups of vegetable broth or chicken or beef. Stir everything. Wait for it to come to a boil. Stir well. Cover the pot and reduce the heat. Cook for about 12 minutes. Stir with a fork to fluff the rice. My hubby loves it. Maybe add more than a little garlic and some hot sauce for Steven. But try it my way first. I hope you give it a try and enjoy it
Hi, Mandy. I like to make Broccoli Salad. It probably has another name but thats what i call it! I use broccoli florets...no stalks...shredded cheese and crumbled bacon. I toss it all with sweet vidalia onion dressing. It is really good. I never measure any of it i just add until it looks and tastes the way we like it. It is super easy!
My papa who has passed since 1985 would always chop up zucchini, potatoes and garlic to him the more the better he was Italian and after that was done he would scramble a couple of eggs in the same pan with the veggies..man it was amazing my mom still makes it to this day even last week good memories

Mandy, here is something I do to jazz up plain rice. Instead of water, use an equal amount of chicken broth, beef broth, whatever flavor you're going for. At the last few minutes of cooking, toss in some frozen baby peas. Something you can do with leftover plain white rice, is add a few things & eat it for breakfast. You can add a little milk to heat it up, & along with that some brown sugar, cinnamon & raisins. It is so tasty, especially on a cold winter day!
Couscous is a fast favorite side & it can be flavored so many ways. A go to is sundried tomato, lemon juice, chopped artichoke hearts & capers if you like. Dried fruit & sunflower or pumpkin seeds, butter & garlic etc.
Our family loves what we call Garlic potatoes. I slice a pile of potatoes and let them soak in cold water for a bit. While they soak, we cover a 9x12 pan with thick foil and melt one stick of butter in microwave. Then we assemble. One layer of potatoes, sprinkle seasoning salt, drizzle the butter and add pieces off minced garlic all over the layer. We keep layering until we can’t add anymore to the pan. Cover with foil and put in a 375 -400 degree F oven for about an hour or hour and a half depending on temp and how many layers. We have also cooked this on the gas barbecue. This is my daughter’s favourite ( I’m Canadian). We especially love to fry the leftovers ithe next night in cast iron pan. Take care
Love the ranch rice idea! My rice trick is to add chicken bouillon to my water and add sliced onion and corn on top. The steam softens the onions and corn and It's so tasty🤤

Cold Green Bean Salad
Make canned green beans better.
1 can cut green beans(drain)
(Not French style)
1 sliced onion
1 can whole peeled tomatoes, (with its juices) slightly chopped.
Mix all together and chill.
Salt and pepper to taste.
We have a corn side dish that our family loves. Grilled or stir fried corn with a little char on it is the best, but it works well with canned corn or frozen corn too! Corn, cilantro, jalapeño, green onion, feta, and a sauce made with mayo/lime juice/salt. It’s delicious and comes together so quickly! (ETA: We eat it as a side served warm or as a dip in chips served cold.)
Mix the rice with the corn salad. . Awesome!
I love to make a Greek salad. Slice cucumbers thinly, add Roma tomatoes cut into bite sized pieces, add vinegrette (olive oil, vinegar, salt, pepper, garlic, diced onions) add one 8 oz. container feta cheese and and 1/2 jar sliced Kalamata olives. Serve at room temperature, or if you make it the day before or in the morning, put in refrigerator until about 30 minutes before dinner. We like to eat this with fresh french bread, or with warm pita bread.
We rinse 2 cans of diced new potatoes by Great Value from Walmart. Melt half stick of butter in a skillet. Dump the two cans and stir for 3 minutes. Add 1 to 3 tsps of old bay seasoning for your liking. My family loves this side dish. The flavor is amazing. Cost is 50 cents a can.

I love the corn salad. For some quick and easy things I do for side dishes is I will take s can of corn drained well add a little milk and some American cheese let it melt down and mix it well together simple but delicious. I also finely mince onion and sauté it with butter and brown sugar and then add a can of drained petite green peas and let them cook for a little while in that brown sugar syrup. So delicious.
Hi Mandy! As a side I do rice with benefits LoL. I add a cup of mixed frozen veggies to my rice as it is cooking, it makes the rice "jeweled" and colourful and it saves cooking a veg as well. Serve it with your meat and gravy or a knob of butter melted over it, salt and pepper to taste - or your ranch seasoning. We don't have ranch seasoning or dressing in my country.
I shush up my white rice 2 ways: the first is putting a whole green pepper in the center as it cooks, the taste is wonderful;the 2nd is using baking grease and once done I take bacon and crumble it along with super fine chopped parsley and done…..I’m definitely trying the corn one soon….
One of my favourite sides is roasted veggies! Potatoes, carrots, peppers, onions , mushrooms, fennel (zucchini is not recommended). Cut everything in roughly the same size. Put everything on a cookie sheet. Drizzle with olive oil, be generous, and spices of choice, we like Italian or taco seasoning. Mix everything with your hands. Roast in the oven for 25 to 45 minutes at 400F. Cooking time depends on size of veggies.
Mix Left over veggies and the oil mix with couscous for lunch the next day. Add chicken and it’s perfect. Love taking it to pot lucks always a big hit!

Hi Mandy. They look good except for the raw onion. I would just leave that out. Love the ranch idea. I have not added it to rice, but I have put it in mashed potatoes and in pasta salad (the powdered kind for both). They were both really good. Try it.
My father-in-law likes to quarter a couple vidalia onions, put in a microwave safe bowl with butter and Lawry's seasoning salt and cover with cling wrap. Microwave for 8-10 minutes or until mostly soft. I didn't think I would like that, but they are really good as a side dish.
We make an orzo salad with green onion slices, chopped ripe olives, chopped orange or yellow peppers, sliced and quartered English cucumbers, and quartered cherry tomatoes. The dressing is made with olive oil, lemon juice, honey, salt and pepper. Red pepper flakes can also be added.

Wasabi mashed potatoes are a regular fav at our house. They go with just about anything, but are sensational with teriyaki chicken!

I make veggies more than real side dishes, but that crack corn sounds amazing! Loved this. I guess if you count veggie dishes, I make Greek style green beans with diced tomatoes and garlic, recipe is on side of green bean can, but it's 30 seconds, lol. I also make rutabagas and parsnips mash with smoked pork chops, again dead simple. Squash casserole, but everybody in the South knows that. Horseradish and lemon roasted new potatoes. Roasted beets and feta salad with vinaigrette, sauteed spinach with garlic and lemon, Asian corn and rice, etc. Nothing fancy or long these days because it's just me and I get demotivated.
P.s. my absolute favorite, definitely southern, way to eat regular plain white rice, is with tomato gravy. I am not talking about pasta sauce that Italians know as gravy, I am talking about real gravy made with tomatoes. My mother made it growing up as a side for things like pork chops and I love it.

One of our favorite potato sides is hash brown casserole. I always make extra broccoli & cheese soup so I can use that in my hash brown casserole instead of the typical cream soup. I add in my sour cream and some bacon and bake. It has a lil’ veggies in it and lotsa cheese and it’s scrumptious. 🎉
Fondant potatoes- I cook these a lot with chicken.
Quick twice baked potatoes- microwave the potatoes then scoop out and make however you want… then bake on 450 until hot!
Roasted vegetables like acorn squash, sweet potatoes, broccoli, carrots, large chunks of onion, radishes halved..
these are weekly sides! I typically do garlic powder, onion powder, smoked paprika, fresh grated Parmesan salt and pepper. The radish I just roast with oil salt and pepper until caramelized then toss in butter and fresh herbs.
Side dish: Into an oven safe dish 9x13 works good but use what you have. Slice 4 russet or Idaho potatoes and a large onion into thin slices. I use a mandolin. Stir or leave in layer. It’s your kitchen. Add Italian salad dressing, about half a small bottle, but if you feel like more this is a no rules recipe so you do what you like. Bake at 425 until potatoes are fork tender, usually around 30 minutes.
Add ins for those who like it: bacon crumbles, cheese, or bits of ham.
We add chicken base to the water when we cook rice. It helps add some depth to it. We also will heat oil and add garlic for 30seconds. Add rice and water and bam, you got garlic rice.
Corn is my favorite food, so anything with corn gets my attention. My brother, mother, and I made candied jalapeños and I think they would be so good in the corn recipe. As always, thanks for sharing.

I make a pot of white rice using the seasoning packet from beef or chicken ramen noodles, add some corn and broccoli florets and it's a perfect side dish 😊💜

One of my favs is “twice baked” potato’s. Cook your potato’s like you normally would for mashed potato’s, once you are done and going to mash them mix them with butter, milk, diced onion, salt, pepper, and sour cream (Measure with your heart 💜). Make them slightly runnier than usual. Put them in a small baking dish and cover with cheese and bacon! Put it in the oven until it’s all ooey gooey 😋
I also love bacon cheddar ranch red/yellow potato’s (season with ranch powder, garlic powder, onion powder, and pepper… bake until fork tender then cover with cheese and bacon and bake again until melted)
Air fryer veggies always seasoned with ranch powder, pepper, garlic powder, and onion powder.
Honestly nothing beats a box of Mac and cheese though 🤣🥰

One of my favs is leftover mashed potatoes become mashed potato bake. Think loaded baked potato using mashed potatoes, toppings mixed in topped with cheese and bake. Leftover that don't feel like leftovers

Mandy, growing up my Mom always made cream n' carrots, we called them white carrots.
Later in life. We learned it was sliced cooked carrots and seasoned White Gravy.
White gravy was thick and held the carrots well. She'd sprinkle little Dill on top.
I make a Three bean salad with a can of green beans, wax beans, and dark red kidney beans and onion, Italian salad dressing, salt and pepper - all to taste. It's really good.
Three bean salad with a twist, can of green beans, kidneys beans, chick peas and can of sweet corn or Mexican can, drain all the cans, 1teaspoon of salt, 2teaspoons pepper, 2 table spoons of parsley or 1 tablespoon of dried dill weed, mix well then pour about 1/4 cup of Italian dressing over beans mix well taste if you make sure it's seasoned to your taste, cover chili until ready to serve it will last about three days in the fridge
White rice w/brown gravey. White rice w/Mrs dash. You can do so much to add flavor to rice.

I do a simple five minute rice. Instead of water I use chicken stock and add frozen veggie mix and make the rice exactly how it calls for. It’s super simple but adds more flavour and veggies on an otherwise boring side dish.
I made the white bean salad but didn't have cherry tomatoes or white beans so I used pinto beans / diced tomatoes and it turned out great!.
Just a disclaimer, my 'family' is my partner and our dogs, but I love to make the green bean salad from yotam ottolenghi's plenty cookbook. It's green beans, snap peas, mustard seeds, tarragon, red onion, red chile, lemon zest, and chard leaves. It's fresh and yummy and really really easy bc there's no cooking
Cook some white rice, cook of cream of mushroom, chicken or celery soup your choice 1/2 of milk salt and pepper to taste then add some parsley add to rice mix well until hot and enjoy

Hay Mandy I made that crack corn dip for the 4th of July and it was a big hit I also just used ranch dressing. When I make white rice I sometimes use beef stock or chicken stock in place of water and we love it.
First let me say I enjoy watching you and your family. I also have taken almost every receipt I have tried and adjusted it to work for my family.
When you started talking about the rice I remember a side my mother-in-law would throw together. It was the first time I ever had a cold rice salad and yum yum it was good. For some goofy reason I have not made it in years. Thanks for the memory wake up.
Cook 1 c rice till done and rinse all the starch out with cold water. After it is drained add 2 tbs powder chicken bouillon, add 1/2 c each, onion, pepper (your choice), tomatoes, and cucumber all diced, salt & pepper and a dash or two of red pepper flakes. Stir and chill one hour. She used what ever was left in the veggie bin at the end of the week. Just adjust amounts and ingredients to your family's taste. Enjoy

I'll be making the corn and the white bean ones, thank you Mandy. How about trying a firm favourite of ours. Its called Peach Walnut Cream salad. Start with any salad leaves, I use halved canned peaches sitting in the middle, topped with whipped cream and a whole walnut or pecan. You can add chopped nuts to the salad with a little dressing on the leaves, or add anything you like but the sweetness of the peaches with the cream are just lovely.
Without tasting anything, I think the Crack Corn Salad would be my favorite also. I make Paula Deen’s Corn Salad and it is so good. We love it with tortilla chips.
Another side dish I learned from a Cajun in Louisiana is Cajun Potatoes - boil baby red potatoes (or quartered red potatoes) with a capful of Louisiana crawfish, shrimp and crab boil seasoning(I always buy the liquid one.) And a little salt. Drain. Mash lightly with fork or a potato masher, not to much just like really lumpy mashed potatoes. Add cheddar cheese, crumbled bacon and butter. Put in casserole dish and bake until the cheese is melted. Yummy. . . It will be spicy with one capful of the seasoning, but bearable, use less if you don't like spicy.

I made the crack corn and it is really delicious. Didn’t have jalapeño relish but did have sweet pickle relish, so I added some Sriracha sauce to it and it worked just fine. That is, I had Sriracha sauce to the sweet pickle relish before I added it to the crack corn.
I knew the one with peppers would be Stevens favorite. They all looked delicious
This is a favorite in our house and you might like it because it has Jalapeno in it 😏
Confetti Bean Salsa
1 Green Bell Pepper, chopped
1 Red Bell Pepper, chopped
1 Jalapeno pepper, chopped
4 Green Onions, sliced
1 Tbsp. Cilantro, snipped fresh
2 Cloves of Garlic, pressed or minced
1 can (15 oz.) White Beans, drained
1/2 cup Corn, frozen
Dressing:
1/3 cup Olive Oil
1/3 cup Lemon Juice
1/4 tsp. Sea Salt
1/4 tsp. Oregano
1/4 tsp. Garlic Powder
1/4 tsp. Thyme
1/4 tsp. Basil
Place all ingredients in bowl (expect dressing).
Whisk all dressing ingredients together & pour over bean mixture; mix gently.
Refrigerate 1-2 hours to allow flavors to blend. Serve with Corn chip scoops or tortilla chips.
The corn and bacon salad looks awesome. Also the one with white beans. It all looks good. 😊😊😊
