Stuffed Mashed Potato Bombs

- I'm telling you folks, this may be one of my best and favorite potato recipes... wait for it... EVER! This easy recipe uses leftover mashed potatoes for an easy leftover idea that fry up crispy with a crunchy crust!
Stuffed Mashed Potato Bombs
makes about 8 bombs
3 1/2 cups mashed potatoes
Mesquite seasoning or salt and black pepper
1/2 - 3/4 cup all-purpose flour (plus more for working)
1/3 - 1/2 cup shredded cheddar cheese
1/4 cup bacon bits (or more to taste)
1/4 cup diced green onion (or more to taste)
1/4 cup sour cream
1 egg, beaten
2 cups Panko bread crumbs
Fry oil
-Stir the potatoes until smooth. If you're using freshly mashed potatoes add a little butter, to taste. Season with our mesquite seasoning (kentrollins.com) or salt and pepper, to taste.
-Stir in enough flour to form a ball that will hold together and isn't sticky. Flour your hands and form the potatoes into balls that are slightly larger than golf ball-sized. Be sure to reserve about 1/3 - 1/2 cup of mashed potatoes to use as a sealer later.
-Form a deep well or hole in the middle of the ball. Layer in about 1/2 teaspoon to 1 teaspoon each of the cheese followed by the bacon bits, green onions and sour cream. Finish by topping with more cheese.
-Bring the outside edges of the potato ball together to seal at the top. Use any leftover potatoes and add to the top, if needed to seal.
-Brush the outside of the ball with the egg and generously coat with the bread crumbs.
-Heat about 1 1/2 to 2-inches deep of fry oil in a Dutch oven or frying container. Heat to about 350 degrees F. Add the balls and fry each side until golden brown. Cool slightly on a wire rack. Serve warm.

My mother used to take left over mashed potatoes, dust with flour, make patties, and fry in a cast iron skillet with butter and top with cheese. We would eat this for breakfast with some bacon, sausage, spam, or ham, and eggs. We just called them potato patties. They get a crust on them and are better than hash browns. Leftovers were always the next days meal. Just good ole country real cooking.Not fancy but they were good and filled us up. Now, it seems as if the leftover meals were are the ones I crave the most. Whatever I make ow, I make extra just so I can make the dishes my mother made with the leftovers. Thank you for posting this as it brings back fond memories to a better time in life.
I made these before, using turkey dinner left overs. We use an egg along with flour to make the mash perfect and binds really well. My mother made them every years the dayz after TG, and served with left over homemade cranberry sauce.

There is no such thing as 'leftover mashed potatoes". At least not when I am around.

@Craig Schultz Peel potatoes for mashed potatoes?! Where I'm from that's a nope. I might half peel them if they're really small but the peel is fully expect to be on there. But hey, you do you're thing.

@@sodaunderthesink9014 Those are my favorite to mash and generally the only ones I do. I'll sometimes add a creamier potato to the mix but it'll be no more than 1/3 ratio. For those I won't take off any peel unless there's some dark spots. Like I said for russets I'll remove some peel if they're small because the peel to "meat" ratio will be off if not. The idea is that every bite will have at least a bit of chew. Oh, and in case you're wondering I clean them very well. So, in reality I'm always removing some of the outside layer through scrubbing. Edit again - so it's not about laziness because it's actually more work than just peeling them.
I couldn't do this without a adding a chunk of jalapeno. Thanks!

Reminds me of pommes dauphine. Basically pastry mixed with mashed potatoes. Similar ingrediants & frying method (assembly is quite different) but without the panko. Looks great!

Mmmm. All the flavors I love. Bacon, cheddar, sour cream, scallions. & potatoes. Reminds me of the Potato skins I used to love at Bennigan’s. Back in the day when that restaurant was real popular, I never once went in there without ordering potato skins. I’m definitely have to make these potato bombs.

Wow these look amazing, my uncle makes his own version for us, in Puerto Rico they're called "relleno de papas" "stuffed potatoes" he would make a stew out of pork but a lot of Puerto Ricans use ground beef, again they look amazing...

I made these delicious, outstanding delights tonight for supper, I made them with turkey bacon as we don't eat pork, and they were WOW! I made half as the recipe and half extra spicy with jalapeno and thai chili(I eat hot pepper with everything), and they are amazing, better than expected.... A big hit, and will definitely make again, thank you!

I will need to try it Thank You my Mama use to take our left over smash potatoes finely chop up a onion and used celery seed and mayonnaise add it all together and let it set in the refrigerator overnight so the onions will get into the potatoes Yum Makes a really good potato salad try it if you get a chance you’ll have to decide how much ingredients to put in with the potatoes because it depends on how much potatoes you have but we like a lot of onion God bless you too my friend thank you for everything
