    Delicious!! That pastry looks amazing!! One small tip. Make a glue with water and flour and use it to seal your samosa edges so that they don’t open up when you fry them. A little area in and cumin in the dough takes it to the next level.

    I've never seen a homemade samosa video. I might give this a try, it looks like it's worth the effort. Plus I will make a bunch and freeze them. Will be better than the Costco ones I buy I bet. Thanks Marion!

    These look delicious. It’s been much too long since I’ve made samosas. The first time I made them from scratch, I had leaks at the bottom of the cone. Now I put two or three peas (or a whole chickpea) in the bottom and it greatly reduces leaks. I always add peas and/or chickpeas to my filling, so I already have them handy. But nothing is stopping you from defrosting a handful of peas just for this purpose. :)

    I just tried someone else's recipe, an Indian lady. The filling came out good...but she used Parathas and honestly the texture is too much like an egg roll so now I'm here! I know you're recipes never disappoint! Love your dough.

    Amazing! But maybe it's because Im from Pakistan but we do a few changes: adding cumin seeds in the flour and the flour is chickpea flour. Also adding peas in the filling.

    Hi Marion! I love your samosas! They absolutely fantastic! I just want to say that you are brilliant! Also, I am from the Eastern part of India and it is quite common to use a cauliflower and potato filling which my mother makes, so you could try that as well if you are interested. But still, I will eat your samosas any day because they are grand!

    We don't close samosas like that at the top after it's been filled because it becomes too thick and hard to bite into. You fold them in a straight line so they also cook faster in oil plus get a nice crunch. This looks more like dumpling folding. I understand this is your way to make the samosa, but I explained the reason behind the normal folding.

    Looks great! I have a fear of frying but I will give this a try at some point as I saw a variety of frozen samosas at my local Indian market and none looked appealing. I saw one that even included corn. There's a difference between filling and filler!

    Hi, we have another Samosa in bengal, called - Misti samosa (singara).
    It's one kind of sweet from bengal.
    You can try it..
    Second thing is that, we have to pour the samosa in low to medium hot oil not hot oil.. that's a trick.

    Your recipe looks great Marion. In Bangladesh they make something similar called Shinghara, and in the dough they add Nigella seeds. 😊

    As a Bangladeshi, I approve ypur recipe.Although the filling is not completely proper but It's ok. But your dough and folding is on point.
    But what you made it’s called "Singara".
    Samosa is totally another recipe.

    If I don’t have cake flour can I make it with all purpose flour and add cornstarch? Is that what cake flour is? Cause that’s what all the other videos say. But King Arthur cake flour ingredients doesn’t call for cornstarch. Please anyone let me know what to do. Thank you!

      Sure, the filling could be anything. Spiced ground meat of any kind. This is the authentic version with the potatoes.

    We don't use fenugreek. Ajwain is to be used in dough.

    Is there such thing as a dairy free ghee? I just can't have dairy at all (not even lactose-free) since the dough is super important? OR an alternative I can use and get close to the same result?

      Middle eastern samosas usually don't have ghee or dairy

      You can use whatever your butter replacement is..or just use oil, it works fine..

    U should not add curry leaves instead of it you should add mint powder to get exact taste as we make in india
