    Finally, i found an Indian cooking show with the right amount of details. The way you talk about little details/background on a specific thing while doing cooking is amazing, you provide just right amount of details--the sign of a great communicator. Thank you. Yes, keep it that way because to be successful in this youtube format, one has to make the videos not too long.

    Also, while I'm at it, I just want to comment that it was sad to see so many critical, caustic, and mean comments. Here is a person sharing the "how-to's" of a recipe, which I found really helpful. People wonder how we can have so much war and hatred throughout our world; what I've read in these comments, explains it all. In order for the world to change, we have to change. After all, do any of us truly feel better when we cut others down? I know I don't.

      Me too ! These videos are great, clearly explained and the written recipes to boot. The world is a harsh place these days, with lots of hateful, ie fearful and unhappy, people so for me, finding a channel that is useful and pleasant actually brightens my day. Let’s be kind at least.

    I made these for a small dinner party with a few neighbors. A tray of about 40 of them were absolutely destroyed in a very short manner of time. Not one person had anything bad to say about them, and every kid, adult, even the ones who "didn't like spicy food" loved them.
    I've said this before, and I'll say it again, the spice can't just be hot for the sake of being hot, it has to warmly complement the flavors, and Ms. Ghotra, you have mastered this. You have made Indian food a staple dish in our house. I have made at least 20 of your recipes so far, and will continue to do so. Not a single one hasbeen a disappointment.

    I tried making these samosas about a year ago, when I first saw this video. But I was too hungry for all the steps, so I didn't make samosas. I only made the filling and ate it. And it was DELICIOUS. Now, watching this video again, and having made roti and flatbread a couple times, I'm ready for the full shebang. I'm going to make the filling and actually make the pastry and put the two together this time to make real samosas

    Hi there! I'm an Englishman living in France, a chef and I've already made samosas many times, however, it had been a while and I thought I'd try out your way of doing it and it worked out a treat!
    As I'm very fond of meat I made a selection of different ones using potato in each of them which I boiled with a teaspoon of turmeric as it's so good for you plus it adds that extra flavour and colour to the spuds!
    As for the meats I marinated some chicken in tikka paste, a little garlic and ginger, the spuds and of course some of that lovely coriander.
    For the other ones I fried up some minced beef, garlic, ginger, some finely chopped onion and the spuds and coriander.
    They all turned out beautifully and my French friends and I scoffed the lot down as an entrée with some mango chutney and a homemade raita!
    By the way, I too love everything to be very spicy but since my friends aren't so keen I held back on the fresh chillies and used a small amount of chilli powder and pepper just to give a little bit of oomph!!
    I have subscribed to your channel and look forward to trying out other recipes of yours very soon!

      I have a house full of picky eaters to cook for so I have to make several different kinds of samosas at the same time and I did a lot of the same things you did like adding the turmeric to the vegetarian ones and making the ground beef and garlic ones and some chicken & veggie ones. Then I had a bunch of dough left so I whipped up some apple, cranberry and walnut ones. It was an all day affair but there were plenty left over to pack for everyone's lunches the next day.

    My adult son likes to cook different ethnic foods, so whenever I mention seeing a recipe or that I've had the dish, and enjoyed it, he will tell me to get the ingredients, if I don't already have them on hand. And we'll make the dish. Now that I've introduced him to your samosas, we're making them Al least twice a month using different ingredients. We used this recipe with diced shrimp added. They were wonderful ❤️. I can't wait to see what we use in the next batch. Thanks for the video.

    I've tried 3 or 4 different samosa recipes from youtube and this ladys version is the tastiest i've found to date.Well explained and demonstrated videos for people with any level of culinary skill (or lack of in my case.)She isn't lying when she says they're more-ish.....i made 12 yesterday and my partner and i have polished them all off in less than 24 hours !!I like this channel, i've followed a few recipes and they all turned out very tasty.I find her instructions quite funny when she says '1 teaspoon of cumin seeds' and puts in about 3 teaspoons instead, i've followed the amount she actually puts in but i've used a whole bag of cumin seeds in a couple of weeks, as well as 2 good sized jars of garlic paste and ginger paste.Cumin seeds, garam masala, and methi are my favourite indian ingredients, i've used lots of them and are the 1st things that make up my spice plate for most dishes i've made so far.Keep up the good work !

      Hari Ghotra Thanks Hari. As i don't eat meat i've mainly followed your veggie recipes, the chick pea and kale was the most recent.
      I do make aloo gobi or saag aloo but change it into a curry.
      Looking through your videos, i like the look of your aloo tikki so i think that'll be next.
      Yes i'm getting through my spices which i thought would last about a year.
      Yours is a nice channel with tasty recipes so i'm gonna subscribe now :-)

      Hari Ghotra Ah i wouldn't go as far as to call myself a good cook, i do put my soul into things i do, like roasting coffee beans or making guitars for example, and get decent results which i find very rewarding.
      Even better is when you can make those things to a standard better than you can buy from shops.
      It's great that in just a few weeks of cooking Indian food as a beginner, some of the things i've made have been better than meals i've paid for from takeaways.....but then again i've had your videos guiding me so really you have to take the credit for that.
      I was hoping to make your madras today but there are 1 or 2 spices i don't have :( i do have a bag of mild madras powder but wanted to follow your spice mix to the letter to begin with.
      Thanks for your kind words and encouragement, i'll definately leave feedback on the aloo tikki and madras when i've made them.... i'm cooking something Indian nearly every day so you'll be sick of seeing my comments before too long hahaha

      I'm loving that you have been encouraged by the videos and you are cooking Indian most days - couldn't ask for much more. Making guitars sounds pretty cool. The madras is delicious if you are doing lamb cook it low and slow for awesome flavours. Looking forward to hearing how you get on with the dishes - good luck!! You should look at my curry kits they are great to have in the cupboard but are still about real cooking - pre made sauces. Hope you get round to that madras!

    These look lovely and I'll be trying them today. For some odd reason while I was living in Scotland I got very much into cooking Indian food, I think it started when I saw Grandpa on grandpa kitchen cooking with such passion but little in the way of equipment. That made me realize I could do it too. Sadly the wonderful grandpa has passed away but his legacy of cooking for so many is still alive. I really enjoyed watching you cook these and hearing the stories of your aunties all cooking together. Food is love and never more so than when shared. Both in the eating and preparing. I'll be subscribing and getting more involved in Indian foods again, even though it's just me while locked down.

    This is delicious!! I made some today using ground beef. Cream cheese. Colby cheese taco seasoning. Taco sauce. And used sour cream and taco sauce for dipping. And i froze 2 freezer bags full that are ready to deep fry. Peaches. Are delious too. Start off with butter and add corn starch and make a roux. Add brown sugar. Cinnamon vanilla flavoring. Add peaches and omg these are good. To use for filling. You can top with powdered sugar And serve with. Vanilla ice cream. Yummmm.

    My husband and I have a samosa recipe with a pea filling that has become a staple in our house. We were really happy to find that they cooked brilliantly in our new air fryer. They are meant to be healthier, but now we eat them all the time - so I’m not so sure. 😊

    I realise this video is from some time ago, but still feel you need to be congratulated again on a wonderful presentation and for giving us all a tip which has proved so useful and which I've found nowhere else. Nowhere. And I've seen dozens upon dozens of videos on making samosas.....
    i.e. the idea of very slightly pan frying the dough for e.g. 10 seconds (like a chappati) to firm it up and give it the consistency needed for later bending and shaping it into the samosa shells.
    It's not difficult for someone less experienced like me to either roll out the dough too thinly or to make a dough which is slightly too damp, (or both, which is even worse) resulting in a weak, flimsy cone of dough that will slither out of your hand before you've even reached for the filling.
    Those 10 seconds are the difference between picking up samosas from the table or from the floor.

    Fabulous to see your version of Samosas. I grew up in Zimbabwe where meat based samosas were a daily part of life. Now living in USA samosas are a part of my families life at every holiday, just wish I had that production line you spoke of. it takes me three days to make enough of them to feed the tribe.     I watched this over and over from the middle of Ramadan until the day before Eid so I could get it right for Eid. With your help I did. We usually get samosas after Eid prayer made by the Pakistani community and I wanted to have them even though we are in quarantine. Thanks to you we did.

    My husband and I would have maybe 8 -10 folks over for an all-night pinochle party or Bonanza card game with the kids using our water bed to watch movies from. We had one friend who brought the fixings for sangria, we cooked up samosas, both the potato and peas as well as lamb. Later in the evening, the smoker took care of the rest of the lamb, big stockpot of fresh corn, saffron rice and salad. Midnight, was Crepes Suzette with oranges and lemons. The older kids lit the brandy and ran the plates around to anyone. It was probably the best meal menus ever. There was NOTHING left but we were all full. The samosas were such a hit and we did have an assembly line for those - men and women because we all wanted more right now. The tamarind chutney sounds wonderful with the samosa. My husband and I used Julie Sahni's cookbook to teach us a lot of what we needed to know.

    This is really interesting. I'm just a regular Canadian, but I Love going out to eat Indian Food, and whenever I do, I always Order Samosas and Pakora before My Meal. Now I can try and make them at Home!

Since I am back in my home country, Namibia, it's not easy to find samoosa (our spelling in South Africa) in this part of the world. I am glad that I stumbled upon your channel where I learnt today how to prepare and cook samoosa.     My MIL was a home cook and made samosas. She tried to teach me, however, she didn't speak much English as she was older and from India. I remember she made them for my husband and me for a road trip in America and it was so special. I love knowing how to recreate them. Thank you!

    What a lovely girl you are! I'm a Granny, at home alone as usual and missing my daughters. I saw your samosa video and decided to learn it. Little did I expect to be cheered up so much by a girl who is so friendly and warm. I loved hearing about the Aunties and Mums in a production line! I'm old enough to remember Britain before Indian and Asian food came to delight our palates. Now we couldn't be without it and neither would we be without our Anglo-Asian/Anglo-Indian brothers and sisters making our country truly 'Great' Britain, true to its roots in multiculturalism!     Fantastic recipe. I appreciate how you explained it step by step.
    When i make samosas, i usually skip the part where you heated the dough on the tawa, but i will definitely try your method. Also, i usually do a potato/carrot/corn filling, or chicken filling.

    So impressed by the samosa instructions! I have just left my kitchen consoling myself with the hope that practise will make those gorgeous fat triangles of scrumptious joy available in Manchester's Curry Mile (Wilmslow Road). But alas. The results look like some things that ought not to see the light of day! Some look like twisted croissants, but in the end, I achieved one samosa that I might present to a very dear and tolerant friend. Out of the 200g flour, I made 8 discs so thin I could see the grain of my worktop. The real nightmare was after applying the glue and folding as shown the pastry just became limp and unmanageable. Then it all turned a bit nasty when I put on the final seal of glue. I suspected the pastry was too thin so I doubled up and it was easier. I still have half the filling left so I will try again tomorrow. Perfect for a lockdown.

    These look absolutely delicious and I will try them very soon, being in lockdown I've been cooking quite a bit, trying new recipes. There's only one thing I would change in this video and that's because I work in a restaurant. I noticed she kept putting her hair back, this may not bother anyone else, but I would pin my hair back, as they have us do in restaurants, so you don't accidentally get a hair into the food. Otherwise, she explained each step exceptionally well. I'm very impressed and can't wait to try these.

    Great video, really makes this recipe easy to understand for me, as someone who had no knowledge of proper Indian cooking. I've been throwing in other filling ingredients like carrot, spinach and courgette (as the veg patch dictates) and they're all working amazingly too
