Couple comments. Since eggs like to run all over the grill and we like cheese in ours, I mix shredded cheese and anything else you want in before I pour them on the griddle. So, scrambled, omelet, or frittata style. Also, I had issues with the oil turning black and making food taste like burnt oil and black. My solution is, any oil on griddle at start up is to be treated like seasoning. Crank up the heat and go till no smoke, then oil or butter and cook. Much better tasting food now.

Hash brown trick. Make your pile fatter for less crispy browns. Or thinner for more crisp
